Stir-fried Eggplant and Shiitake in Oyster Sauce 茄子と椎茸のオイスターソース炒め

This is another variation of stir-fried eggplant to which this version is very similar but I skipped a few steps to make it easier and quicker. Since we got very good fresh shiitake mushrooms which were very thick, I added to this to the stir-fry. It is difficult to see which is the eggplant and which is shiitake (Picture #1) visually but when tasting it, the differences becomes clear. The addition of the shiitake makes this dish more interesting than just eggplant. Thick, fresh shiitake almost tastes like meat. Perilla and ginger add their distinct flavors.



Ingredients: (about makes 8 small servings like seen in picture #1).
2 Japanese (Asian) eggplants (picture #2), each weighed about 110-115 grams, stem ends removed and cut into a large bite size by cutting on bias as you roll 45 degrees (“ran-giri” 乱切り)
2 fresh shiitake, large and thick, stems removed and cut into a similar size large chunks
1/2 tsp ginger root, peeled, and julienned, 
5-7 perilla leaves, finely chopped
1 tbs vegetable oil (I used peanut oil) with a splash or dark sesame oil

Seasonings:
1 tbs oyster sauce
1/2 tbs soy sauce (I used x4 Japanese noodle sauce)
1/2 tsp sugar (optional)
1 tbs Shiaoxing wine (optional)
1/3 cup chicken broth, low sodium



Directions:
In a wok, add the oil on medium high flame. When the oil is shimmering add the eggplants. Starting from the skin side cook/brown for several minutes turning as needed.
Add the shiitake and cook 2-3 minutes more.
Add the ginger and stir.
Add the wine and broth (careful it may ignite).
When the liquid starts boiling, turn down the flame to medium and add the oyster sauce, soy sauce and sugar.
Reduce the liquid a bit and add the perilla.
Check the seasoning and adjust

The combination of eggplant and shiitake work every well together with nice umami reminiscent of a meat dish. The addition of the perilla adds a nice bright taste which provides a good contrast.

Garlic Chive Dumpling ニラ頭饅 or 韮菜万頭

We used to grow garlic chives or “nira” ニラ in our herb garden but it failed in two ways: 1) the garlic chives were very fibrous except when we harvested them very young and 2) they grew like weeds taking over the entire herb garden. The plant had deep roots that were very hard to extract. It was quite a lot of work to get rid of it and we are not completely successful even now. (Digression alert: Some years ago we hired a gardener to do the spring clean up which included the herb garden. When he found out the herb garden contained garlic chives he specified the clean up would include everything EXCEPT the garlic chives.) Although we did make quite a few garlic chive dishes, we gave up growing our own. We have been shying away from even buying garlic chive for a while (besides it is not readily available). Since Weee almost always carries garlic chives, we tried them. They came in quite a large bundle (about 1 lb). We tried it in several dishes and, even though they were fully grown, the garlic chive were not fibrous at all.  We added garlic chives to our stir-fried dishes, soup and as a “ohitashi” ニラのお浸し. We still had some garlic chives left so I started looking for new recipes to use them. I came across a recipe by Koh Kentetsu on YouTube.  I was not familiar with this dish. I am not sure if this is based on a known Chinese dish or invented in Japan but it is apparently very popular. 

A quick internet search indicated that “nira-manju” or “garlic chive dumpling” was “invented” in a Chinese restaurant called “Niramanju Fussa” or “韮菜万頭福生” near the Yokota American military base 横田米軍基地. In any case, I have not tasted or seen the “original”. I made this based on the Koh Kentetsu recipe but I ended up making some changes (in the seasonings, not intentionally. Since I made this dish from memory after I saw the YouTube video). This is in the similar ilk as gyoza 餃子 and shumai  焼売 but maybe even better. We really like the garlic chive flavor and cripsy skin (picture #1). It re-heated nicely in the toaster oven. Since I seasoned the filling adequately, we did not use dipping sauce.



The innovations of his recipe is to use two sheets of store-bought wonton skin to encase the filling and the instructions of how to encase the filling very easily for a home cook. It was cooked exactly like gyoza producing a nice crispy skin on both sides (picture #2) and juicy inside.



Ingredients: (made 10 good-sized dumplings, see picture #2)
1/2 lb ground pork
1/4 lb garlic chive, finely chopped (about 1/5 in)
6-7 medium shrimp, thawed, and minced (optional)
1/2 tsp minced/graded ginger (original recipe used only ginger juice)
1/2 tsp minced/grated garlic (optional,  original recipe does not use this. My wife felt this added too much garlicky flavor)
1 large cap of fresh shiitake mushroom, finely chopped

Seasnings:
1 tsp Shao Xing wine
1 tsp oyster sauce
1 tsp soy sauce
1/2 tsp dark sesame oil

20 Wonton skins

Directions:
Add the meat, shrimp, garlic, ginger and seasonings in a bowl and mix well
Add the mushroom and garlic chives and further mix and cover. Let it stand in the refrigerator for a few hours
Using a medium sized ice cream scoop, make balls of the filling and place them on a rimmed baking sheet.
Place the wonton skin on top of the filling balls (I moistened all the edges to make sure it would stick)
Using all five fingers, press down on the edge and turn several times until the sides of the wonton skin adhere to the filling. Then flip it over (picture #3). (If you just steam this, you are making “garlic chive shumai” ニラシュウマイ).



Place the second set of wonton skin on top (I also moistened the outer edges). Using the same process, turn and totally encase the filling to make sure all sides are attached to the filling and each other
Press gently to make a disk (picture #4)



(I covered the dumplings with a plastic wrap and refrigerated 1-2 hours before cooking but this is not needed. I just wanted to have all the dumpling assembled before cooking them in the evening.)
Using a 12 inch non-stick frying pan, I added the vegetable oil with a splash of sesame oil on medium flame and browned one side (2-3 minutes) and turned it over to brown the other side for another 2-3 minutes (picture #2)
Add a small amount of water (about 1/4 cup). Cover with a tight fitting lid to steam for 2-3 minutes or until the steam stops coming out.
Remove the lid and let the moisture evaporate. Keep browning the bottom and the other side with the addition of a small amount of sesame oil toward the end of cooking.

This is a really nice dish and easier to make compared to gyoza (because you do not have to clip the edges). A good amount of garlic chive adds a nice flavor (my addition of garlic was a bit too much for my wife, I will omit it next time). This is a perfect small dish with drinks.

Steamed Carrot Buns with Ginger Custard 人参蒸しパン生姜カスタードクリーム

When I was making our weekly grocery list, my wife asked me to include carrot juice. Apparently, she found a recipe for steamed carrot buns on the King Arthur web site. I told her we have a 5lb bag of carrots in the fridge and they were getting old. I volunteered to make fresh carrot juice using our often forgotten juicer. The carrots were growing whisker-like roots and the sprouting carrot tops were trying grow leaves but otherwise they looked ok to me so I made some juice. But when we took a taste we found it had a slightly moldy after taste. So instead of carrot juice, I added a bag of fresh carrots to the grocery list. When the carrots arrived I made the carrot juice and this time, it tasted really great. So, my wife went ahead and made these buns with ginger custard cream.



The buns have nice texture and pretty color (pictures #1 and #2) but we did not taste much of carrot. She sliced the buns and layered on the custard (picture #2). The ginger custard has a nice ginger flavor and complimented the buns.



The original recipe is from King Arthur Flour website.

Ingredients (made 12)
Custard
1 cup (227g) milk
1/2 cup (113g) heavy cream
one 1" piece (12g) fresh ginger, scrubbed and coarsely grated
6 tablespoons (74g) granulated sugar
2 tablespoons (14g) cornstarch
pinch of table salt
4 large egg yolks
1 teaspoon King Arthur Pure Vanilla Plus or King Arthur Pure Vanilla Extract

Dough
1 cup carrot juice. (The original recipe called for 1/2 cup (113g) milk, and 1/2 cup (113g) carrot juice, warm)
1 heaping teaspoon instant yeast
3 cups (360g) King Arthur Unbleached All-Purpose Flour
6 tablespoons (74g) granulated sugar
1 tablespoon vegetable oil, plus more for coating the bowl
1/2 teaspoon table salt
1/2 teaspoon baking powder

Directions
1.To make the custard: In a medium saucepan over medium- low heat, bring the milk, cream, and ginger to a bare simmer — you should see the liquid steaming with some tiny bubbles forming around the edges.
2. Meanwhile, in a large bowl, whisk the sugar, cornstarch, and salt until well-combined and lump-free. Add the egg yolks and whisk vigorously until the mixture is smooth, airy, and pale, about 1 minute.
3. When the milk mixture is hot, slowly dribble it into the egg yolk mixture, whisking constantly. This process of slowly adding hot liquid to the eggs yolks is called tempering and ensures that the eggs don’t scramble from sudden heat. After slowly adding about 1/3 cup of the hot milk, add the rest of the hot milk faster. Once it is all incorporated, transfer the liquid back into the pot, set over medium-low heat, and cook, whisking constantly, until the mixture starts to simmer and thicken to a pudding-like consistency, about 3 to 4 minutes.
4. Pour the custard through a fine-mesh sieve, pressing it through with a spatula or spoon, and into a container. Stir in the vanilla. Place a piece of plastic wrap against the surface of the custard to prevent a skin from forming, then refrigerate for at least 2 hours. While the custard chills, make the dough.

5. To make the dough: In a medium bowl, combine all the dough ingredients and knead — by hand or with a mixer — to make a soft, elastic dough, about 8 to 10 minutes in a stand mixer. Place the dough in a lightly greased bowl, cover, and let it rise for 60 to 90 minutes, until it's nearly doubled in bulk.
6. To shape the buns: Turn out the dough onto a lightly floured surface and divide into 10 equal pieces (around 68g per piece).
7. Shape each piece into a smooth, tight ball. Place the shaped buns in a layer of a steaming basket lined with parchment paper leaving plenty of room in between for the buns to expand. (I was able to fit 4 buns per steamer layer.). Transfer any buns that don’t fit onto a plate or baking sheet. Cover all of the buns and let them rise for 30 to 40 minutes, until puffy and slightly larger.
8. To steam the buns: Bring a shallow pot or frying pan of water to a boil. Place the steamer basket over the top and steam for 10 minutes. Remove the steamer basket from the water and let the buns rest, still covered, for 10 minutes. Finish steaming any remaining dough balls.
9. To fill the buns: Once the buns are cool, cut them through the center. Then use a small spoon or a pastry bag to fill the bun with about 2 to 3 tablespoons (30g to 40g) of chilled custard. Serve right away.
10. Storage instructions: These buns are best served immediately. If you’d like to fill only a few buns at a time, save the steamed, uncut buns and the extra custard in separate airtight containers in the refrigerator for up to 3 days. To reheat the buns, wrap in a damp paper towel and microwave in 15-second increments. Let cool slightly, then split open and fill with the chilled custard.

These are a very elegant bun to eat for breakfast. The steamed bun had a nice soft texture and although it was slightly sweet we did not detect a distinctive carrot flavor. But they made a great ginger custard delivery system. The custard was very sweet vanilla with an essence of ginger flavor. You can’t go wrong with this combo.

Eggplant Stir-fry with Perilla and Ginger 大葉ナス

Again we got some Japanese groceries delivered from Weee which included some Asian eggplants. Since the delivery included quite a good number of eggplants, I had to come up with a number of different dishes to use them before they go bad. I made this dish which is new to me. I was inspired by looking at a YouTube episode. This was a perfect dish since in addition to eggplant, it uses green perilla which is growing quite well in our herb garden. As usual I treated the recipe as “advisory” and made some modifications. This is slightly sweet due to the oyster sauce and added sugar but it is also somewhat spicy from the ginger. It has a nice perilla taste as well. I think this is good served warm or cold. It’s also another item that goes well with cold sake.




Ingredients:
One asian eggplant (this was a slender long one, which is equivalent to two small Japanese eggplants), cut into quarters lengthwise and then cut on the bias into bite sized pieces.
10 green perilla leaves, finely chopped (left in the picture below).
1 tbs julienne of ginger (center in the picture below).
2 tbs oil (I used light olive oil with a splash of dark sesame oil) (divided 1 tbs each).
1 tbs soy sauce
1 tbs oyster sauce
1 tsp ponzu
1 tbs chicken broth (the original recipe calls for granulated chicken broth or 鶏がらスープの素 which is freeze dried granules of chicken and vegetable broth. This is an ingredient that often appears in Japanese recipes)
2 tsp salt and 1 tbs potato starch (for preparation of the eggplant)

Directions:
Salt the eggplant pieces, mix well and and let it stand for 5 minutes or more (until some moisture comes out)
Wash with cold water to remove excess salt, ring out moisture from the eggplant (left in the picture below), lightly coat with the potato starch



Add the oil to the frying pan on medium flame. When the oil is hot add the eggplant pieces turning until both sides are cooked and browned (3-4 minutes), set it aside (picture below)



Add the remaining oil to the pan on low flame add the ginger and sauté for one minute or until fragrant.
Add the perilla and sauté for one more minute. Add the soy sauce, oyster sauce, chicken broth and mix.
Add back the eggplant and stir and the sauce slightly reduced (1-2 minutes).

This is another flavorful rendition of “eggplant”. I was very careful not to overcook it and have the eggplant dissolve as a result the skin had a slight crunch while the white interior was soft and creamy. It had a surprising bite of hot spiciness which took us a little while to figure out was coming from the ginger. But it added another positive note to the dish.

Ginger Cookie Crumb Muffin

This is probably the last muffin my wife will make from left-over cookies; Because she has used them all up. This time it was using thin ginger snaps. As before, she made crumbs from the ginger cookie and used it as part of the batter. She added finely chopped candied ginger and pecan for good measure. The first time I tasted it, I did not taste strong ginger flavor but the next morning when we had it for breakfast, I tasted much more ginger flavor. A good amount of the pecan also did a good job in adding a nutty flavor. Very nice muffn.



This was not quite following the recipe but she  made it very similar to the “Cookie and cream crumb muffin”. I will ask her to take over.

Ingredients: (makes 12 muffins)
For the muffins:
2 cups AP flour
2/3 cup sugar
2 tsp. baking powder
1/2 tsp. salt
2/3 cup milk
1 tsp vanilla extract
1/2 cup melted butter
1/4 cup sour cream
2 eggs
3/4 cup roughly crushed ginger cookies
1/2 cup finely cut candied ginger (or to taste)
1 cup toasted pecans (roughly chopped)

For the crumb:
1/2 cup butter room temp.
1 tbs. honey
1/4 cup regular sugar
2/3 cup flour
1/4 tsp. salt
1/2 cup of crushed ginger cookies.

Directions:
For the muffins: put the cookies in a plastic sandwich bag and using a meat pounder crush them into large pieces. (Otherwise the CuisineArt chopper has a hard time handling whole cookies. We found it’s attempt to do so is quite pyrotechnic.) Add the pieces to a cuisineArt grinder and process until the cookies are small crumb as shown in the picture below. Set aside.

Preheat the oven to 350 degrees, and line a 12 -cup muffin pan with liners of choice. Set aside.
In a large bowl, stir together the flour, sugar, baking powder, and salt. Set aside. In a small bowl, whisk together the milk, vanilla extract, egg, melted butter, and sour cream until combined. 
Pour the wet mixture into the dry mixture. Add in the crushed cookies and pecans and stir the whole mixture together with a spatula until there are no dry pockets.



For the topping : 
In a medium bowl, using your hands mix the butter honey, brown sugar, sugar, flour, salt and additional crushed cookies until the mixture is creamy and smooth. 
Evenly and generously cover each tin of muffin batter with the topping. Bake muffins for 18-20 minutes, or until just golden. A cake tester should come out clean. These muffins were very flavorful although it took several days for the ginger flavor to fully mature.

The topping was crunchy and the muffin itself was tender in texture with a bright ginger flavor. The pecans added a nice nutty texture and taste. Another great breakfast addition.
