We like to have local (meaning North American) seasonal produce like corn and blueberries when they are in season. Although we have already had fresh corn quite a few times this season, we realized we have not had fresh baby corn for some time. In general fresh baby corn is not readily available in the local grocery stores but we found that Weee carries it so we ordered some. We pondered how to cook it and decided to try air frying. We served this with miso-marinated grilled Chilean sea bass, cauliflower puree, ratatouille and sautéed green asparagus (picture #1). I cooked the fish in a dry stainless steel frying pan covered with parchment paper to produce a cooked effect similar to grilling. All worked well and the baby corn added as a nice crunchy and refreshing side.
we did not do anything special to the corn. Just coated it with olive oil and seasoned it with salt and pepper. We air fried it at 370F for 15 minutes but it did not brown. We raised the temp to 450F and cooked an additional 5 minutes which produced a nice browned surface (picture #2).
I am not sure air frying has any improvement over simply sautéing. Either way baby corn is a summer treat.
