Shumai V2 焼売再挑戦

When I tried to make shumai 焼売 the first time, things did not go well. The skin did not adhere to the meat filling. In an effort to salvage the situation, I ended up converting the shumai into wanton noodle soup. So, this is the second try at making shumai. This time I was more careful to wrap the filling and pinched the sides of the wonton skins. It was a qualified success. I made this as a lunch over the weekend.


The wonton skins adhered much better than in the previous version.


I should still try harder. The top portion was stuck together but toward the bottom was a bit loose.


I served it with rice vinegar with white pepper and soy sauce.


As a side, I served cucumber and tomato  (skinned and  cut Campari tomato) mixed with masago (small hatchlings - which was previously frozen) dressed with sweet vinegar.


I very quickly made the filling with ground pork, chopped ginger, and chopped scallion seasoned with sesame oil, salt and pepper. I just wanted to try making the shumai again; I was challenged to make the wonton skins stick better. I was more careful to press the side to the filling and also let it sit for 10 minutes before steaming hoping the moisture from the filling would permeate the wonton skin.

I also got a new bamboo steamer (#1) with a perforated parchment paper insert(#2) which prevents the steamed items from sticking to the bottom of the steaming tray. With this new contraption, I could space the shumai so that they did not touch and would not stick to each other (#3). I steamed the shumai for 10 minutes and they came out OK. They at least did not stick to the bottom of the tray or each other.


Although I still need to refine the way I form shumai, I'm getting there. Or maybe, I should stick to making gyouza.

Meat ball and wonton soup 中華風肉団子ワンタンスープ

This what I made out of the remains of my failed attempt at making shumai. Since the meat fillings and the wonton skins came apart but the fillings were quite tasty, I immediately came up with the idea of making meat ball wonton soup and served it as a lunch the next day.


I cut the wonton skins into wide strips making it like a type of noodle. I added tofu, broccoli, and carrots.


I also used the stems of the broccoli.


Since this was re-purposing failed shumai, I just made this soup without any recipe and using mostly other leftovers and made it a sort of a Chinese soup.

Earlier in the day, I prepared blanched broccoli florets (which I often do for the week to have a supply of fresh vegetables) and the stems were left (I usually do not use them). But this time I sliced them and put into the soup. I also had half of a good sized carrot left over from another dish. I peeled and made large match sticks. For the soup, I used a mixture of leftover Japanese dashi (which I made earlier with a kelp and bonito dashi pack) and chicken broth (Swanson, I had leftover in the refrigerator). I also used a Japanese silken tofu meant for eating "raw" which was passed "best enjoyed by" date.

I put some peanut oil and a splash of dark roasted sesame oil in a sauce pan and I added finely chopped ginger root, garlic, the sliced broccoli stems and carrot. I  sautéed them a bit. I added the liquid and added the meat filling (or meat ball) and wonton skin cut into strips. I seasoned it with salt, light soy sauce, and a bit of mirin. I cooked it for 10-15 minutes and then added the blanched broccoli florets.

This was a quite good soup. Nice flavors from the meat filling and wonton noodles gave a nice texture. The broth was also quite good with nice ginger and sesame oil flavors. Although I will try making shumai again, this was a nice recovery dish.

Shumai with daikon 大根入り焼売

This was my first attempt to make shumai 焼売 and I am posting this as an example of how things don't always work out well in the cooking world. (I can only hope my next attempt may be better). I followed a recipe I saw in a Japanese newspaper on line (Asahi shinbun). Although the meat mixture was just fine, the wonton skin did not stick together or to the meat and the dish became "meatballs with wonton noodles". In any case, I served several examples with two sauces; on the left is rice vinegar with white pepper and the right is soy sauce.


As you can see the skin got loose and separated from the filling after steaming. In any case, it tasted great.


I followed the recipe closely. One unique item in this recipe was using pre-cooked small cubes of daikon in the filling.

Ingredients: (make 14-15 shumai)
Minced (or ground) pork 200 grams (I used my usual hand minced pork tenderloin trimming but meat from the fattier portion may work better).
Daikon 100 grams
Shiitake mushrooms; 1 dried (I used two fresh including the stems torn lengthwise and then chopped. I am sure the dried mushroom may have more umami flavor but I did not have time to rehydrate some).
Wonton skins

Seasoning:
Salt 2 grams (probably 1/2 tsp)
Soy sauce 1 tsp
Ginger juice 2 tsp
Sake 2 tbs
Dry shiitake soaking liquid 2 tbs (I used dashi instead).
Sugar 1/4 tsp
Sesame oil 1tsp
Potato starch (Katakuri-ko) 1/2 tsp

Directions:
1. Peel and cut the daikon into 7 mm cubes and cook in boiling water for 2 minutes. Drain and cool.
2. Mix the seasoning into the pork starting with the salt and mix well.
3. Add the daikon and mushrooms and mix (#1 and #2).
4. Prepare the steamer for continuous steam (#3).
5. Meanwhile, make the shumai by placing the filling in the middle of the wonton skin placed on a circle made from the index finger and thumb, push it in and add more filling to make a cylinder (#4).
6. Place them on the steamer (#5) and cook for 10 minutes (#6)


I think I made 2 mistakes. When I formed the shumai, I needed to pinch firmly so that the side of the wonton skin would adhere better to the filling. When steaming, I should have placed the shumai slightly apart so that they would not stick to each other.

In any case, despite this, they tasted really good. The addition of the daikon added a nice texture and taste. The dipping sauces were also nice. I ended up dipping the shumai in both. I also used some Japanese hot mustard. Later, based on the philosophy that when an unsuccessful attempt at something results in lemons make lemonade, I converted these shumai into another dish. Onion, shirataki, and pork pouch 豚肉と白滝の巾着

This is a variation of a dish called "Kin-chaku" 巾着, which is the name for a Japanese-style pouch with a string tie. When this word is used for a dish, it is referring to a deep fried tofu pouch stuffed with different items. One popular variation is mochi-kin 餅巾着 which I posted many years ago as a part of "oden" おでん  Japanese winter stew in which "mochi" rice cake was stuffed in a fried tofu pouch and simmered in seasoned broth. This time, I stuffed fried tofu pouch with seasoned onion, ground pork, and shira-taki noodles 白滝. I am not sure where I learned this variation. I imagine I got it from either an oden place I used to frequent in Sapporo or from my mother. The pouch could be stuffed with other items. Your imagination is the limit. I served this as part of an abbreviated oden dinner that included a boiled egg, fish cake with burdock root or "gobo-ten" ゴボウ天 and carrot.


I cut the egg and the pouch to show the inside. This combination is quite good and it is rather filling although not as much as the ones stuffed with "mochi" rice cake.


Ingredients:
1. Deep fried tofu, 5 full-size cut into half making 10 pouches (use as is but just cutting open one end if using the half size "Inari-age" 稲荷揚げ ) (#1). If frozen, thaw and pouring hot water over it in a colander which removes excess oil.
2. Ground pork (I used hand cut trimming from pork filets), the amount is totally arbitrary (#2).
3. Shirataki-noodle, 白滝, 1 package rinsed, parboiled, rinsed again and drained (it has a peculiar smell) (#3)
4. Onion, 1 medium, cut in half and sliced (#4).
5. Oil (vegetable oil with splash of dark sesame oil) for cooking (#5 and 6).
6. Soy sauce and mirin for seasoning, one tbs each (#7).


Directions:
1. Sauté the onion in vegetable oil, and add the shirataki-noodle (#5) and the pork (#6) for several minutes until the onion softens and the pork turns color.
2. Add the soy sauce and mirin (1 tbs each) (#7) and braise until most of the liquid evaporates.
3. When it cools, stuff the pouches and close it with tooth picks (or tie it with kanpkyo 干瓢).
4. Add the stuffed pouch in oden broth with other items and simmer.

This is a quite filling dish and certainly add to the variation in the oden items.

Bento Box お弁当

We usually make sandwiches to take to our respective work for lunch. Although we have a quite collection of Japanese bento boxes, I rarely  make bento for lunch (too much work). This was such a rare occasion. I made this for my wife since she was having surgery for her rotator cuff injury. Although this was a same day surgery, we knew she would be essentially fasting nearly 20 hours, before, during, and after surgery, by the time she was released from the hospital.  Knowing she would be hungry I made this bento box so that she could eat it either at the hospital or on the way home in the car. (She wolfed it down in the car on the way home). I chose a two-layered Bento box (for adults) which is very functional and the right size that we like best. Both the bottom of the top layer and lid have gaskets and once the elastic band is applied it makes a good seal preventing leakage.


It came with a Japanese style "Kinchaku" pouch 巾着.  Since the rabbit is my wife's Japanese/Chinese zodiac animal, this is very appropriate.


So, the night before, I packed this bento for her. This lunch box comes with a small mold which can be pressed on the rice to make small individual semi-cylinders. This makes eating the rice a bit easier and looks more elegant. I sprinkled dried red perilla salt ("Yukari" ゆかり) on one row and dried green seaweed ("Aonori"  青のり) on the other.  The small compartment next to the rice (which can be adjusted) is usually for pickled or salted vegetables ("Tsukemono" 漬物) but I put salad (my cucumber salad, skinned and sliced Campari tomato and arugula).


The upper layer can be divided into 4 compartments for side dishes. The central "H" partition can be slid to adjust the sizes of the end compartments. For protein, I used fish, pork, chicken, and egg including grilled salmon and Spanish mackerel simmered in miso (left), barbecued pork loin thinly sliced (center upper) and chicken squares with gorgonzola cheese and dried fig topped with my home-made figgy cranberry sauce (center, lower).  Of course, any Japanese bento box has to have "dahimaki" Japanese omelet (right).


Both grilled salmon and blue fish simmered in miso were leftovers and I separated  the two with slices of cucumber.


I added dried green sea weed "Aonori" to the "dashimaki" Japanese omelet . To make a snug fit for the space, I used slices of tomato.


Despite my wife's total lack of ability to use her right arm/hand, she enjoyed and finished the bento box in the car. She said the bento was very good and assured me it was not due to "Hunger being the best sauce". I thought the amount was quite large but she somehow managed to finish it. Now, she is on the mend and gradually regaining her right arm functions with physical therapy. I should make bento more often--for less serious occasions.

Cold "shippoku" udon noodle with simmered vegetables 冷製卓袱うどん

Since we had several hot and muggy days recently in the Washington DC area, I made this cold noodle dish from ingredients I had on hand. I had cold simmered vegetables and prepared udon noodles (which were leftover for making cold fresh tomato pasta dish). I call this cold "shippoku" udon 冷製卓袱うどん. This (warm version) is a popular dish in the Southern islands of Japan (Shikoku 四国 and Kyushu 九州). I do not know the exact definition of it but I take it as a noodle (either soba or udon) dish with lots of cooked veggies and other toppings. I made this all cold for a hot summer day.


Cold cooked vegetables included daikon, carrot, skinned Campari tomato and sugar snap. Since I had Chinese-style simmered pork or "Chashu" チャーシュー (this one is made from pork butt and has much more fat than meat made from pork loin), I cut it into batons and added it to the dish.


The original simmered vegetables included daikon, carrot, shiitake mushroom, Campari tomato (simmered in Japanese broth which was lightly seasoned with light colored soy sauce and mirin. After the veggies were soft/done, I let it cool and then refrigerated it). We ate the veggies by themselves for several days so by the time I made  this dish only a few pieces of daikon, carrot and tomato were remaining. The sugar snap was just blanched and cooled. For the broth, I added more concentrated noddle sauce from the bottle to the broth in which the veggies were cooked.

This was all leftover control but it was nice cold refreshing dish, perfect for our lunch over the weekend.

Indian-style pork "Vindaloo" curry with pickles インド風ポークカレー

I asked my wife to make this curry from leftover barbecued pork butt since it was getting to the end of it's life. This is my wife's version of pork "Vindaloo" which we posted few years ago. Instead of using uncooked pork, she used barbecued pork cut into cubes this time. Since I used dry rub (roasted cumin, smoked paprika, salt and pepper) for the barbecue, these spices were automatically added to the curry.


She added roasted mustard seeds, you can see the seeds in the curry which gave small pops and bursts of mustard  flavor. Instead of coconut milk, she used yogurt (since we do not particularly fond of the taste and flavor of coconut milk), it broke a bit but still tasted good. Despite the addition of yogurt and reduce cayenne pepper to 1/4 of the lower end of the amount suggested in the original recipe (about 1/4 tsp), this curry was hot enough for us. Despite using cooked pork, it was tender and quite enjoyable. This is another way for taking care of leftovers.


Since I had a fresh green and yellow zucchini (really yellow zucchini not yellow squash), I added panfried coins of zucchini seasoned with salt and pepper, grilled fig with balsamic vinegar. In addition, I added pickled cucumber and carrot I made.


I just used the sweet vinegar I used to make pickled myouga since we used up the pickled myouga from this container. I placed cucumber (American minicucu), carrot and skinned Campari tomato into the leftover sweet vinegar. I let it pickel for several days in the refrigerator.


We decide to have a store bought mini baguette (which was partially baked and frozen). I  finished baking in 350F toaster oven in convection mode for 15 minutes. This went well with the curry. Next time, we will make naan, though.

Ravioli with wonton skin ワンタン皮のラビオリ

My sister-in-law gave me a cookbook called "Perfect Pairings"(special issue of "Food and Wine"). One weekend, my wife and I were browsing through it and found several interesting recipes. My wife really wanted to try this ravioli recipe which was paired with champagne in the book. Since it was a very hot summer day, we had this with a rather inexpensive rose wine from Provence called Domaine du Garde Temps 'Tourbillon' Côtes de Provence Rosé 2016 (made of 50% Cinsault, 30% Grenache, 20% Syrah). We started by trying to follow the recipe. When we realized the recipe used 12 oz. of cheese and made over 60 ravioli, I intervened and decided to "wing-it" in my usual style. I used most of the ingredients for the stuffing (without measuring) and took a shortcut using store-bought "wonton" skins instead of making a pasta dough. We served this as a first dish with the aforementioned (a bit over-chilled) rose wine.


For sauce, I simply made a brown butter sauce with capers and Meyer lemon juice with a side of basil leaves. I included a quarter of Meyer lemon just in case we needed more acidity in the sauce.


The next day, I made a sauce of finely chopped shallots sautéed in butter with basil leaves added at the end just to wilt them. I topped with grated Parmesan and just before eating squeezed on some Meyer lemon juice. This was a better sauce for the ravioli.


Ingredients (made about 32-35 ravioli):
For filling
1/2 cup whole milk ricotta cheese
1/4 lb prosciutto, thinly sliced and then minced into small pieces (We used Boar's Head brand which appears to be imported from Italy).
1 whole egg
1/4 cup Parmigiano Reggiano, grated
One package of baby spinach, cooked without adding additional water, moisture pressed out and chopped.

Instead of using a pasta sheet I used one package of Wonton skins (We ran out of the skins leaving a small amount of filling which we cooked in a ramekin in the toaster oven).
Mixture of flour and water to form a glue to seal the ravioli

For sauce
3 tbs unsalted butter
1-2 tsp of capers, drained, roughly chopped
1/2 Meyer lemon juice
salt and pepper to taste

Directions:
Mix all the ingredients for the filling in a bowl (#1).
Using a small ice-cream scoop, place the filling in the center of the wonton skin and paint the skin with the flour and water mixture (#2).
Take another wonton skin, paint one side with the flour glue and press both wonton skins around the filling try to not to trap any air (#3).
Using an appropriate sized cookie cutter cut around the filling making the square into a round  (#4).
Repeat until either all the filling or all the wonton skins are used up.  We ran out of wonton skins a tad earlier than the filling) (#5 and 6).
Boil the ravioli in rapidly boiling water (salt and olive oil added) for 2-3 minutes or until they float (#7).
Drain and let it cool briefly on metal rack (#8)
After they cooled we stacked the ravioli on a large square plate with parchment paper brushed with olive oil to make multiple layers and keep them from sticking together.  At this point, I suppose you could serve, refrigerate or freeze them.


For serving:
Melt the butter in non-stick frying pan until slightly brown, add the capers.
If needed season it with salt (prosciutto is rather salty, so do not over season).
Add the ravioli and warm it up, squeeze on the lemon and serve immediately.

Making ravioli even when using pre-made pasta skins is a bit of work. My wife and I worked as a team. I filled and sealed the ravioli and she cut them into rounds with the cookie cutter. She over saw cooking them and I prepared the "landing pad" so they would not stick together. But it was worth it. Although I thought I may have used a bit too much prosciutto when I was making the filling (I was trying to use it up), it was just the right amount.  It amalgamated into the Ricotta and spinach mixture adding a nicely complex meaty, salty flavor. The Meyer lemon added a bright note which was both lemony and orangey. This went well with our rose from Provence. The wine is very light with some acidity which went well with acidity provided by the lemons.  The fresh basil leaves were also great. Next time, I may just add few basil leaves to the butter sauce itself. Since we serve only a few ravioli at a time, we will be enjoying them for some time to come. (Good thing we didn't follow the recipe and make 60!)

Burdock root wrapped in prosciutto プロシュート巻きごぼうの照煮

This is a modification of a Japanese recipe. Japanese really like to wrap cylindrical vegetables in meat or ham. I read a recipe in which whole burdock root or gobo 牛蒡 was first simmered in seasoned broth and then wrapped in thinly sliced pork belly and cooked in "teriyaki" 照り焼きsauce. Since I bought a package of gobo which contained 2 good sized root stalks, I needed to come up with new way of serving it. So, inspired by the recipe I had read I made this wrapped gobo. Since I didn't have thinly sliced pork belly, I used prosciutto as the wrap. This was the first dish for one evening. It went fairly well with the red wine we were having.


I used whole gobo cooked skin on.


Since I also made my usual "Kinpira-gobo"金平ごぼう, I served it as well.


Ingredients (for 2 servings seen above):
Gobo, three 3 inch lengths, skin scrubbed with a vegetable brush but skin not removed.

For initial cooking:
3-400 ml of water
1 tbs rice vinegar

For final cooking
Japanese dash broth about 300 ml (I used my usual bonito flakes and kelp dash pack)
Soy sauce, 1 tbs
Mirin 1 tbs
Sake 1tbs

Prosciutto, three slices

For Teriyaki sauce
Soy sauce 2 tbs
Sugar 2 tsp (Optional, I did not use).
Mirin 2tbs
Sake 2 tbs

Directions:
1. Cook the pieces in water with vinegar (to prevent darkening) for 10 minutes on low flame.
2. Wash the pieces in cold running water and cook it in plain water for 10 minutes to remove the vinegar taste (water may turn dark).
3. Simmer in the seasoned dash broth for another 10 minutes (#1) and let it cool down in the broth.
4. Separate one thin slice of prosciutto (#2) and wrap the gobo (#3 and #4)


5. In a dry non-stick frying pan, brown the prosciutto starting with the seam side down (#5).
6 Add the teriyaki sauce and cook shaking and rolling the gobo rolls until the sauce thickened (#6).
7. Let it cool and cut each gobo roll into 4 pieces and serve.

Despite the rather long cooking the gobo maintains a nice crunch and the prosciutto added nice flavor as well as some saltiness. I could have used more prosciutto to make a thicker layer but this was just fine as it was. The original recipe used thinly sliced pork belly which may have been better but we really liked this version.

Pork chops Japanese style ポークチョップ

Pork chops are a rather popular cut in the US. Most popular are loin chops with rib attached (rib chops). One weekend, I bought a rather large pork loin without bones. Since it was large, I decided to cut off 4 loin chops before I trussed and seasoned the remaining loin for our usual  hot smoked pork on our Weber grill.  I wondered how I should cook the chops and decide to use a Japanese recipe. I grew up with simply sautéed pork chops in Japan but I wanted to do something a bit different. After reading through a few recipes, I made modified Japanese pork chops. I served them with sautéed pencil green asparagus and  corn shuffle my wife made unmolded and cut in half.


The sauce also included onion and shiitake mushroom.


I probably over cooked it and it came out a bit dry but the sauce helped.


Ingredients: (for 4 servings).
Four Pork loin chops (or rib chops).
Salt and pepper for seasoning
Flour for dredging
Olive oil

For sauce
One medium onion, halved and sliced
4 tbs ketchup
4 tbs worchestershire sauce
1/3 cup dry red wine
3 fresh shiitake mushroom, stem removed and sliced
2 tbs butter (or olive oil).

Directions:
Season both sides of the chops with salt and pepper, dredge them in flour.
Cook in a small amount of butter or olive oil until nicely browned (see below), turn them over and repeat.
Set the chops aside on a plate
Add the onion in the same pan and sauté until cooked and add the shiitake mushroom and continue cooking for several more minutes,
Put the vegetables in on the side of the pan, add the ketchup and cook it while stirring until the ketchup becomes caramelized and dark.
Add the red wine and Worcestershire sauce and mix and cook for a few minutes until the sauce lightly thickens.


Put back the chops and coat them with sauce (see below) to complete cooking the chops.


Serve hot with the sauce on the top. In Japan, the chops are served precut into bite sized pieces for ease of eating with chopsticks. This was not bad but the chops were a bit on the dry side.

Miso flavored silken tofu with green beans 味噌味の豆腐とインゲン

At our Japanese grocery store, I bought this silken tofu called "Sincere silken tofu, just right firmness" 誠実の絹 from "Otokomae tofu" 男前豆腐. This is made from Hokkaido soybeans called "Pride of snow" or "Yukihomare" ユキホマレ. Since I am originally from Hokkaido, I am partial to a product like this. Since good tofu is impossible to get at the regular grocery store (the tofu we get there is pretty bad by Japanese standards but I still make some dishes from it). In any case, I had this tofu from the Japanese grocery store for a few days in the refrigerator. I thought about what kind of dish I could make to enjoy this good tofu. Cold cubes (hiyayakko 冷や奴), warm cubes in kelp broth (yudoufu 湯豆腐) or tofu miso soup (tofu-no-misoshiru 豆腐の味噌汁) came to mind but I ended up making this impromptu tofu and green bean dish with ground pork and miso. This happened because I had blanched green beans and hand chopped pork which was a by-product of when I prepared bone-in pork shoulder for pork roast. It is remotely similar to "mapo tofu" but this is not spicy at all which suites my wife better.


The quality of green beans is really hit or miss but these were especially good. They had a nice firmness and crunch but were not tough at all.


Since the flavor was very gentle, I added Japanese red pepper flakes (iccimi tougarashi 一味唐辛子) to add some zing.


Ingredients (this made 6 small servings):
Silken tofu (320 gram), Cut into cubes
2 tbs white miso
3 tbs sake and mirin
1 tsp soy sauce
1 tsp vegetable oil (or dark sesame oil for stronger flavor)
Ground pork (amount arbitrary but I probably used about 100 grams)
1/2 tsp Ginger root, skinned and finely chopped
Blanched green beans, cut in half, about 10

Directions:
In a frying pan, add the oil and when heated, add ginger and then the pork.
Stir until the pork changes color
Add the miso, sake, mirin and soy sauce. Dissolve the miso and stir until the sauce comes to a boil.
Add the tofu and gently toss until the tofu gets warm and the sauce gets somewhat thick
Taste and add more soy sauce or salt if needed.
Serve warm with a sprinkle of Japanese red pepper flakes.

The tofu was really good. The flavoring was very gentle and really highlighted the texture and taste of the tofu. This is a good first drinking snack of the evening. The leftovers warmed up nicely in the microwave oven (requires only short time 20 seconds for two small serving together in our 600W microwave oven).

Pork-Ricotta meatballs リコッタチーズ入りミートボール

I often make pork or chicken meatballs. I usually add eggs and panko to make them light and tender. Instead of frying, I usually bake them. I came across this recipe in the Wall street Journal. The original recipe was for lamb meatballs. Since I had my usual hand-chopped ground pork from the trimmings of pork tenderloin, I made meatballs with pork and my usual seasoning but added Ricotta cheese instead of bread crumbs. I served the meatballs with tomato sauce I made from fresh and skinned Campari tomato. I added blanched broccoli as a side.


My wife added some sweet potato Gnocchi she made some time ago and froze. She just cooked them simply in butter. This made it a complete dinner but I took the picture before the gnocchi was added so it does not appear.


Ingredients:
For meatballs:
1 lb ground pork (I used  hand chopped trimmings of pork tenderloins.)
1/3 lb whole milk Ricotta cheese
1/4 cup grated Parmesan cheese
1 small onion, finely chopped
1 jalapeño pepper, seeded, de-veined and finely chopped
3 fresh shiitake mushrooms, stem removed and finely chopped
2 eggs
1 tsp smoked paprika
Salt and freshly ground black pepper

For tomato sauce:
1/4 cup olive oil
6 skinned fresh Campari tomatos, quartered  (I usually have this prepared over the weekend but when we do not finish them during the week, I use them to make tomato sauce)
3 cloves of garlic, finely minced
1/2 medium onion, finely minced
1/2 tsp each of dried oregano and basil
2 bay leaves
Pinch of red pepper flakes
Kosher salt
(Optional) 1/4 tsp baking soda (Although made form fresh Campari tomatos and the sauce is not too acidic I still add baking soda to further reduce acidity) and 1/4 tsp of sugar.

Directions:
For meatballs:
Sautee the onion, jalapeño and shiitake mushroom in olive oil until the onion is transparent. Season with salt and pepper. Let it cool to room temperature.
Mix all other ingredients into the onion mixture (I was going to adjust the consistency if it was too soft by adding bread crumbs or flour but it was just right and I did not add them).
Using a medium size ice-cream scoop, make meatballs and place it in a baking sheet lined with aluminum foil coated with olive oil.


The green is from jalapeño pepper.


I cooked it in a preheated 350F oven toaster in convection mode for 30 minutes. The bottom became flat but that does not bother me.


For tomato sauce:
Put the olive oil in a deep sautée pan on low heat and add the red pepper and garlic.
When the garlic is fragrant, add the onion and sautée for several minutes on medium flame until soft and transparent, add the campari tomatos with its juice, add the oregano, basil and bay leaves, mix and simmer until the sauce is reduced to the consistency you like (30-40 minutes).
Taste and add salt and sugar (optional).  I also added the baking soda. It causes the sauce to start foaming.  Keep stirring and let it simmer further until all the bubbles subside.

Adding Ricotta and Parmesan cheese made the meatballs very tender and flavorful. This is definitely more high fat meatball but certainly good. I may make this with ground lamb and more closely following the original recipe some day. By adding my wife's gnocchi, this was a well balanced and satisfying dinner that goes so well with red wine.

Double pork bowl ダブル豚丼

This is sort of leftover control but it was pretty good. On the previous weekend, we ended up getting quite a large pork loin roast. Instead of cooking all of it one way, I decided to divide it into two portions. From one half, I made several loin chops which I made into "tonkatsu" pork cutlet and from the other half, I made Japanese/Chinese style pot roast or "chasu" pork (in this version, I also used star anise). Toward the end of the week, I made this double pork bowl using both the tonkatsu and the pot roast.


I heated the tonkatsu in the toaster oven. For the pot roast pork, I added sliced onion and the pork with the cooking liquid in a small frying pan and cooked the onion until soft and the meat was heated up. I just put these two kinds of pork on a bed of rice.  I poured the juice from the pan over the onion and pot roast pork, then placed the sliced tonkatsu and added tonkatsu sauce. For the green, I also added blanched broccoli.


The pot roast was the very last piece left.


As leftover control dish was pretty good.
