Appetizers 4 kinds お通し4種類

These are 4 kinds of appetizers we had as starters one evening. Nothing really new. Below, from left to right, are; simmered Japanese eggplant 茄子の含め煮 or 煮浸し and simmered "kabocha" Japanese squash かぼちゃの煮物, salmon in sweet vinegar 鮭の南蛮漬け, "Kazunoko" herring roe with cucumber and "ikura" salmon roe 数の子、胡瓜の酢の物のいくら載せ, and the last is the Spanish mackerel simmered in miso 鯖の味噌煮 I usually make.


I usually take the corners of the kabocha pieces off to prevent them from crumbling during cooking but I was a bit lazy and did not do that this time. Nonetheless the pieces still kept their shape. The eggplant was a small long Japanese eggplant (this is the only kind we can consistently get). I also added blanched broccoli and heated up in the microwave.


The Japanese eggplant was from HMart Korean grocery store which we are using more often. As an innovation from my usual method of cooking eggplant I fried the skin side first. Supposedly, this  helps to retain the skin’s color. Although this is not much different from the previous post, I describe the recipe for my own convenience.


Ingredients:
3 Japanese eggplant
2 tbs neutral vegetable oil
two small pieces of ginger, crushed with the side of the knife.

250ml Japanese dashi broth (I made this with my usual bonito and kelp dashi pack)
3 tbs soy sauce
3 tbs mirin

(Instead of soy sauce, I am using "shirodashi" 白だしand light colored soy sauce).

Directions:
Cut the eggplants in half lengthwise. Shallowly cut the skin in crosshatching pattern and then cut lengthwise again to make 1/4 eggplant.
Add the oil to a frying pan on medium flame and add the ginger for a few minutes until fragrant.
Add the eggplants skin-side down and fry for 3-4 minutes and turn over to fry both of the fresh sides for 2-3 minutes each,
Add the seasonings and broth (below), put on the lid and simmer for 3-4 minutes.


This is good eaten hot right after it is cooked but it can also be stored in the broth in a sealable container in the refrigerator. The stored eggplant can be eaten cold or heated up in the microwave.

This is usual salmon nanban. This one was really good since the quality of the salmon (from Whole foods) was good and I did not over cook it. I served this with sugar snap in salt broth スナップ豌豆の塩びたし.

Mr. and Mrs. Segawa of Tako Grill kindly gave us "kazunoko" herring roe 数の子. I prepared it as I described in my New Year dish tab. The half serving shown below was soaked in dashi broth with soy sauce and mirin seasoning. I marinated the other half serving in sake-lee and miso mixture  or "kasu-miso" 粕味噌. Since this preparation will last longer than the one soaked in dashi broth we will eat it closer to the holidays.


I also served Spanish mackerel in miso sauce 鯖の味噌煮. (The red dots surrounding the mackerel are part to the decoration of the bowel not part of the preparation.)


This was a quite a good starter line up for the evening.

Special take-out Kaiseki box from Sushi Taro 寿司太郎のテイクアウト特製会席弁当

Prior to COVID the omakase counter at Sushi Taro was our special-occasion-go-to place. As a matter of fact, we had a reservation in March this year but because of COVID, that got canceled. I knew for some time that, although the restaurant was closed, Sushi Taro has been doing take-out. But getting there either from home or work for the pick-up was impractical. Since I started thinking about the NewYear “Osechi” 御節 from Sushi Taro, I contacted them. I was delighted to find out that they are going to do Osechi for the next New Year and I quickly placed an order. During that interaction, I learned that they do special omakase kaiseki boxes-to-go and that they can deliver. I quickly placed an order. Delivery was scheduled for Friday at 5pm. We were like little kids in anticipation. I even "just happened" to come home from work a bit early for the delivery. It arrived in two, two-tiered (bento or modified jubako?) boxes. (a total of four boxes with three compartments each). We initially thought we got two identical sets but when we opened the second box, surprise!  We were totally blown away. All compartments contained many wonderful different dishes. The first one had some cooked dishes, two different kinds of sushi. The cooked dishes in the top tier were still warm.


The second set included fresh sashimi and sashimi fish dishes.


Disclaimer alert:  This entry is just for us to remember what we enjoyed so we can relive the experience. A menu was not included so in some cases I am guessing what the dishes were and may be totally wrong.

We started with sashimi 刺身. Akami 赤身, chu-toro 中トロ, hamachi ハマチ, salmon サーモンand ama-ebi shrimp 甘海老.


From upper left clockwise: grilled ginko nuts 焼銀杏 (We love ginko nuts.We used to be able to buy small cans of boiled ginko nuts but they totally disappeared and we have not seen them for sometime. ), California Uni カルフォルニア雲丹, cod roe たらこ (not a “mentaiko” 明太子 but with some spice), grilled egg plant 焼きナス (it must have also been smoked. It had a nice smokey flavor and the broth was subtly seasoned and delicious ).


Abalone liver simmered with sansho 鮑の肝煮物 (I think this is seasoned with whole sansho pepper 実山椒, a type of “arimani” 有馬煮, this is a perfect drinking snack and we love it, the red berry must be goji berry or “kuko” クコ), sake steamed abalone 鮑の酒蒸し with a nice seasoning , I think the next one is Hokkaido "bafun" uni 北海道のバフンウニ , and under the cover is ikura marinated in soy sauce いくらの醤油漬け. (On one of our visits to the restaurant we had an impromptu uni tasting to compare California vs Maine vs Hokkaido - they are all good but I am a little partial to the Hokkaido uni mostly because I am originally from there. 


From the left upper clockwise: Some kind o pate/paste. I am not sure but monk fish liver ("ankimo" 鮟肝) may be included, some kind of fish liver simmered, edible flower petal (probably chrysanthemum) and chestnut "sibukawa-ni" 渋皮煮.


The dish shown below was a small whole simmered fish with roe, "kanroni" 甘露煮.  I thought this could be "Ayu" sweet fish but it was not.  So, I don't know exactly what it was. It could be "Iwashi" イワシ sardine. It was cooked to tenderness and the bone was soft and could be eaten. It was topped with "shiraga-negi" white hair scallion 白髪葱 . This is an example of the attention to detail characteristic through out these dishes. The scallion was a small detail but it went very well with this fish and really set off the dish.



From the top, kaskino-ha-zushi 柿の葉寿司 (trout sushi wrapped in persimon leaves), flower renkon 花輪レンコン and shime saba oshizushi (battera) しめ鯖の押し寿司 or バッテラ.

Pictured below large prawn/small lobster; probably "botan-ebi" ボタン海老 (raw) in a gentle broth,  topped with myoga, roe (cooked), and julienne of red and green sweet pepper. The sweet pepper and sweet meat went well together complementing each other.


Crab meat, jelle sauce, ikura, slices of dried persimmon 干し柿 and other items. Again, sweetness of the persimmons and crab are good match.



The next three dishes are all cooked and contain some kind of fish/sea food. The selection of ingredients such as the matsutake, myoga, chestnuts and kabocha in these dishes as well the use of eggplant and persimmon in the dishes above exemplify the autumn season.  The use of seasonal ingredients is another example of the attention to detail shown through out the dishes in these boxes. 

Underneath of all the vegetables were two good sized shrimp balls shinjo エビしんじょ(minced shrimp and white fish paste). Fried lotus root, kabocha, simmered "fu" gluten cake, matsutake stems, green beans topped with zest of “kabosu” かぼす.


Simmered “kabu”turnip かぶ, chestnuts 栗 and fish (cod?). The green is most likely “Mizuna” 水菜 .


Small tasty fish (I do not know what it is), simmered, matsutake 松茸, fried shishito ししとう, picked myoga 茗荷の甘酢漬け.


Fortunately, we just got a shipment of sake from Tippsy sake. We had a cold “Kagatobi” 加賀鳶 純米吟醸 from Ishikawa-prefecture 石川県. We throughly enjoyed these wonderful dishes in the comfort of home. It was quite a memorable treat!

Chawan-mushi with “ikura” salmon roe 冷製茶碗蒸しイクラのせ

 This is not a new dish but it was the second appetizer for the evening when we had the tuna caprese as the first dish. This is a cold chawan-mushi which I made in the morning.  I topped it with “ikura” salmon roe and garnished with “ao-nori” 青海苔 a type of dried green seaweed called laver.


For this version of  chawan-mushi , I used shrimp, chicken and scallion since I did not have the other items I usually use.




Ingredients: (for 6 small cups such as the sized container shown above)
3 large eggs (150-170 ml)
Broth, three times volume of the eggs (450- 520ml). Any broth including chicken broth will do. I used a mixture of bonito and kelp broth from a dashi-pack and broth I made from shrimp shells. I seasoned the broth with mirin, light colored soy sauce and salt.

6 large frozen shrimp, shell on, thawed, salted, let it stand for 5-10 minutes, shelled and cut into bite sized pieces.
1 cooked chicken tenderloin, shredded.
1/2 scallion, sliced on bias.

Directions
In 6 small bowls, add the shrimp, chicken, and scallion. Mix the eggs and seasoned cold broth, pour the egg mixture through a fine sieve. Steam (I used an electric wok) on high stream for 10 minutes and then lowered the steam and keep steaming until the egg mixture was set (another 10-15 minutes or more).

Instead of eating this hot, I let it cool to room temperature and refrigerated it. I served it cold with Ikura and dried “ao-nori” on top.

Since I did not have other items such as shiitake mushrooms, I used whatever was available. This simpler approach worked very well for this cold chawan-mushi. The addition of the ikura salmon worked very well. It provided a nice texture with a delicate pop in the mouth followed by a  burst of fresh sea saltiness. After this we had another tuna dish.

Italian-style octopus salad and more small dishes イタリアンたこサラダ

This is a variation on the theme of Italian-style squid salad イタリアンイカサラダ. To use up boiled octopus legs, I made this salad one evening. The dressing is made with rice vinegar, Dijon mustard and olive oil seasoned with salt and black pepper.


For vegetables, thinly sliced Vidalia onion, American mini-cucumber, finely chopped celery, skinned Campari tomatoes, Kalamata olive on the bed of our home grown arugula. Like squid salad, this is a good combination and a rather healthy starter.


We then proceeded with our usual suspects of small appetizer dishes.


This is cold tofu or "Hiyayakko" 冷や奴. I changed the topping with bonito flakes, finely chopped scallion, "ikura" salmon roe and blanched edible chrysanthemum all dressed with concentrated noodle sauce.'


This is the last of Chinese-style squid salad 中華風イカサラダ (store-bought).


This is Spanish Mackerel simmered in miso sauce サバの味噌煮 I made a few days ago with a side of blanched broccoli. I just warmed them up by microwaving for 15 seconds. Once I make this, we can usually stretch it out for about 10 days storing it in the refrigerator. This is always a good-to-have item.


We still had left over gyoza 餃子 I made and store-bought fish cake. Sugar snaps are blanched, cooled in ice water and soaked in Japanese dashi broth seasoned with salt スナップ豌豆の塩びたし.


We really like to have many small dishes with many different taste and textures.

New Year's feasting , evening of day 3 正月3日目の夕

On day 3 of the New Year, we are still enjoying the osechi box. Here I show a few of the highlights or our favorites.


This is "ankimo tofu" あん肝豆腐 or "monk fish liver terrine". It has smooth creamy texture bursting with ankimo flavor.


This is new item this year; "Ebo-dai koji-zuke" えぼ鯛麹漬.  "Kabura" white radish and white fish meat (butter fish) marinated in koji 麹 (malted rice). This dish evokes a childhood memory for me of "ii-zushi or izushi" 飯寿司 of Hokkaido where I grew up. It is a dish similar in which koji-rice, vegetable and fish (in Hokkaido, herring, anchovies, and salmon were popular) fermented together. It appears that this is a type of izushi that is a New Year's dish in the Kanazawa 金沢 area called "kabura-zushi" かぶら寿司. In any case, it has a nice gentle sweetness from the koji. The subtle sourness and crunchy vegetable in contrast with the savory and soft fish meat are a great combination.


This is the last of steamed sea urchin. Although fresh raw sea urchin is the best, this is really good in its own right. It was steamed on a sheet of cedar which renders a subtle flavor/smell. Come to think of it, this is a good way to preserve the sea urchin so that it will last through New Year's cerebration.


On the left is miso-marinated (and dehydrated) egg yolk with walnuts. All of these items are perfect with cold sake. We can really get used to this.

Jan 2nd evening 正月2日の夕

Now it is the 2nd day of New Year. The first three days of New Year are called "shogatsu sanga-nichi" 正月三が日 or simply "Sanga-nichi". These days are considered official New Year holidays in Japan. So, since we observe this custom in our household, we continued indulging in the good food from the Sushi Taro osechi. I served several assorted items by placing them in a small hexagonal "juubako" 重箱 container.  Almost all except a few items are from the osechi box.


We also enjoyed head-on shrimp provided in the box. To make them fit on the plate and to make it easier to access the goodies in the head (mostly the liver), I separated the head from the tail. There is nothing delicate about this; the only way to enjoy is to pick it up and suck it out. The shrimp was large and had a nice sweet firm meat. It almost tasted like lobster. Wedges of Meyer lemon also added a bright flavor.


One of the tips to enjoying the osechi box fully is to heat up certain items before serving. Here I heated up the fish in the toaster oven and simmered vegetables in the microwave oven. Heating up these items really makes them more succulent and accentuates the flavor.


The items in the small blue bowl are hachling fish called "Jako arimani" じゃこの有馬煮. They had such a nice flavor (I like to put these on rice). The items in the center are "date maki" omelet and steamed ground white fish meat with matsutake mushroom or "Matsutake shinjo"松茸真蒸 .


This picture shows cod roe wrapped in kelp (bottom left), herring roe with butter fish underneath and white radish in koji 麹 or えぼ鯛麹漬け (top left). More about this in a later post.  On the right in a small light blue bowl are black beans in syrup or "Kuromame" 黒豆 (again, a must-have for New Year).


These were really nice starters.  At this point, we have consumed near 2/3 of the osechi goodies. We have to hurry up to finish it while it is still fresh. (Its a tough task but I think we are up to it.)

New Year's day evening with Sushi Taro Osechi 元旦の夕, すし太郎のおせち

We were wondering how long we have been getting Sushi Taro's Osechi box to celebrate New Year. We went back to our blog and it appears we started getting Sushi Taro Osechi on 2012.  In any case, we got the box on the afternoon of New Year's eve and started indulging in its contents the evening of the New Year's day.


We were delighted to see our favorite "karasumi" 唐墨 or "bottarga" or sun-dried mullet roe this year as well (right upper corner) along with the other usual goodies.


This is the second layer. Miso-marinated beef tongue  (right upper corner) is new this year. We like beef tongue but this is quite different from how we prepare it. Another one of our favorites "Monkfish liver terrine" or "ankimo tofu" あん肝豆腐 is peaking out on the right upper corner of the third (bottom) row.


Since I got frozen bluefin tuna sashimi block form Catalina Offshore products last December in preparation for the coming new year, we had some on New Year's eve and finished it New Year's day evening.  The tuna was very good and it was between chu-toro 中とろand ko-toro 小とろ.


On the sashimi plate, we had tuna, steamed sea urchin, karasumi, boiled shrimp (leftover from making ozouni), white and red fish cake, salmon Russian marinade, marinated herring roe (this is one I prepared) and burdock root stuffed with mustard. This year, karasumi was sliced a bit thicker than usual so I grilled it lightly in the toaster oven before enjoying it.


The second small plate had my "Chicken matsu-kaze yaki" 松風焼 (left in the picture below, I used toasted walnuts instead of pine nuts so it is not really "matsu-kaze" or "wind over the pine"). The green vegetable is from the osechi box called "pickled Chishatou" ちしゃとう or celtuce. This is a food item I am not familiar with but it is a stalk of a type of special lettuce. It has a nice crunchy texture. This "Date-maki" egg roll is from the osechi box and the meat behind it is miso marinated beef tongue. It is firmer than I make it but it had a nice beef flavor.


The third small plate had "renkon" lotus root cut in flower-shape dressed in vinegar, marinated (I assume in miso) egg yolk with walnut (another of our favorites), smoke salmon rolled in thinly peeled radish and cumquat in syrup. Behind the renkon is steamed fish cake with matsu-take mushroom or "matsutake shinjou"松茸しんじょう(cut in half).


This is an octopus leg I dressed in mustard miso vinegar タコ足のぶつ切りの芥子酢味噌和え.


We had the same sake (the last bottle) as last year which we brought from Japan two years ago. Jurakudai daiginjou from Kyoto.


We thought these are the starter but after eating these and drinking, both of us were quite full and called it quits. It was a nice evening to start 2019.

Happy New Year 2019 新年御めでとうございます 2019

We had an unexpected break in our blog last year due to some unforeseen events that absorbed most of our attention. As the saying goes, life is what happens when you are planning something else. Hope we can start up and continue the blog again with the start of the new year. Although it is getting repetitious our first post of 2019 starts with our Kagami-mochi 鏡餅 new years decoration and since it is year of the boar; two figurines of boar. We placed this in the"tokono-ma" 床の間 alcove of the small Japanese-style room we call the tea room.


The larger boar is made of fired clay in the form of a bell called "Do-rei" 土鈴 and the small one is carved from wood.


As we are entrenched in our routine, it is very hard to start the morning without coffee and bread. So we had our usual cappuccino and assorted breads for breakfast instead of the traditional new year's soup "Ozou-ni" お雑煮 which we had for lunch. Although, as usual, we got the osechi box from Sushi Taro yesterday, we are not going to touch it until this evening. So the lunch consisted of dishes I made in addition to the soup.


I made this year's ozo-ni slightly differently. For the broth, I combined chicken and kelp/bonito broth and used sous-vide chicken breast. We had dikon, carrott, seasoned freeze-dried tofu ("koya-dofu"高野豆腐), shrimp, shiitake mushroom and snow peas. I precooked the chicken breast (sous vide), shrimp and snow peas separately and added them to the soup at the last moment just to warm them up. I added frozen "Yuzu" 柚子 skin  just before serving.


Although this was a lunch, we had a small cup of symbolic sake for good luck and health.  The sake cups are a gift from our sisiter-in-law in Japan many years ago and made of thinnest porcelain.


These are are the dishes I made for this year (all posted in the "Norio's New Year dishes" tab in the main blog page); salmon kelp roll 鮭の昆布巻き, herring roe in broth 数の子, Russian salmon marinade 鮭のロシア漬け(from left to right in the back), Date-maki omelet 伊達巻 and simmered freeze-dried "ko-ya"  tofu 高野豆腐 (front right to left).


Of course, I had to serve daikon in sweet vinegar or "daikon-namasu" 大根なます with boiled octopus leg and ikura salmon roe いくら.


So we did what we could to make an auspicious start for 2019 and we're looking forward to hitting the Osechi box this evening.
