Frozen bluefin tuna block from Great Alaska Seafood 冷凍オーストラリア産の黒鮪

 We have purchased quite a few items from Great-Alaska-Seafood. We tried frozen sashimi-grade yellowfin tuna or "kihada-maguro" 黄肌マグロ blocks which were on a par with the ones we can get at our Japanese grocery store. Recently we received an email from Great-Alaska Seafood about a special offer for Australian aqua-cultured sashimi-grade blackfin tuna, "Hon-maguro or Kuro-maguro" クロマグロ. In general I am a fan of any tuna but I tend to like blackfin a bit more than yellowfin. Great-Alaska’s advertising was pinpointed targeting. They clearly “had-my-number/Knew-where-I lived”/had-me-dialed-in”. I instantly succumbed to the offer and ordered the tuna. If I recall correctly I had to call a special number (rather than order on the internet) and the offer was good for only one day. The offer consisted of a total of 8 lbs made up of 8,1 lb packages,  half-and-half chu-toro 中トロ and akami 赤身.  As you can see below, the blocks were irregular in size and inconsistent in shape. I surmise that because they were not cut like Japanese “saku” blocks which are neatly of equal size and shape they probably could not be used in a Japanese sushi bar for example. 


Each packages are marked either  “akami” (left) or “chu-toro” (right) .


We first tried the smallest package which was marked as “akami”. I served two small dishes.


The picture below shows a dish of straight forward sashimi with cucumber sunomono きゅうりの酢の物 with tomato garnished with “ikura” salmon roe. The akami was certainly better than the frozen yellowfin tuna and good enough but not great.


I also made it into cubes of tuna and avocado 鮪とアボカドの角切りon a bed of arugula dressed with soy sauce, garlic, sesame oil.


So bottom line is that this is not bad. It is certainly better than yellowfin tuna but it was not truly great. Nonetheless we are satisfied that we have this choice and will have absolutely no trouble “choking” it down .

Ikura from Vital Choice バイタルチョイスからのイクラ

 I am always looking out for alternative sources of sashimi items such as "ikura" salmon roe. Depending on the source, the quality and price vary a lot. Our Japanese grocery store almost always has it but the per ounce price is very high. Other sources often have Ikura but the roe are a smaller size with a smaller diameter.  We like salmon roe with a 5 mm diameter rather than the smaller ones. Sometimes the roe are identified as trout roe, but often the type is not specified so it is very difficult to know exactly what type of salmon roe we are getting. We learned "keta" or "chum" salmon roe fits our preferences best. Recently we have gotten frozen keta salmon roe from Vital Choice. It came as a package of three, 7 oz. glass jars. The price was about average, and the quality was quite good. The 7 oz jar size was also a good size for us because we could generally finish it in 5 days. We have prolonged the shelf life of ikura by adding a marinade. (I use a mixture of x4 concentrated 'mentsuyu" Japanese noodle sauce and sake). Since we used up three of the jars, I went back to order the same but the only choice at that time was a 2 lb. (almost 1 kg) tray. I thought that would be way too much for us to use up before it went bad unless we could somehow divide up the quantity into smaller portions. But the offer was too good to pass up so I took a chance and ordered it. Turned out the pack could be subdivided (see discussion below).

 Ikura can be used many different ways. The below is an appetizer of home-made blini, cream cheese, smoked salmon, ikura and chopped chives.


Another way we like it is as a topping for cold "chawan-mushi" Japanese savory egg custard.


The picture below shows how we received the package (#1). It was packed with dry ice and solidly frozen. Once I opened the lid, I saw the package was divided into 4 compartments. Each compartment was about 1/2 lb. or 8 oz). Fortunately for us, using a small plastic spatula, ikura in one compartment could easily be removed (#3). I vacuum packed three blocks (#4) and placed them in the freezer. I let the remaining block, thaw in the refrigerator for a few hours (#5).  Although the center was still solidly frozen, the peripheral portion started thawing and crumbling away from the still frozen section. I placed the crumbled portion into a separate plastic container with an airtight lid and put it back in the freezer. 


I left the remaining ikura in the refrigerator to thaw. The amount was about 1/4 lb (or 4 oz). It was just the perfect amount for us to use up in a few days. I refroze the portion which was semi-thawed (#6). Later I thawed this and it looked and tasted fine. So, buying 2 lbs of Ikura is very feasible…it was quite good, I might add.

Cucumber salad PA Dutch style PA ダッチ風胡瓜サラダ

Many years ago when we discovered the American mini-cucumber, we were delighted since it is the closest thing to a Japanese cucumber we can get here. Before this, the only options were the standard American cucumber or the English cucumber. We really didn't like the standard American cucumber. It's much larger than the Japanese cucumber. It has a tough skin. It has more and larger seeds. It has somewhat mushy, watery flesh, and for us doesn't have much taste. So, as far as we were concerned, the available alternative was the English cucumber which I used until we discovered the mini-cuke. While it has more flavor than the standard American cucumber, the English cucumber still has, to a lesser extent, some of the characteristics we didn't like about the standard cucumber. It was better than the standard cucumber but not as good, to us, as the mini-cuke. The thing we like most about the mini-cuke besides its smaller size, thin skin, small seeds is its intense fresh cucumber taste.  Even now it is extremely difficult to get a Japanese style cucumber. Occasionally, if we are lucky, it is available at the Japanese grocery store. So for the most part I am using American mini-cukes to make "asazuke" 浅漬け and "sunomono" 酢の物 with good results. One day we realized we had an excess of cucumbers in the fridge so, out of the blue, my wife blurted, "Its summer. We have a lot of cucumbers.  Let's make Pennsylvania Dutch style cucumber salad like I used to eat summers growing up in rural Pennsylvania." So I was set to slicing Vidalia onion and American mini-cukes. After consulting her "historic"  PA Dutch cookbooks my wife made the dressing. This was quite good. 


Ingredients:
5 mini-cukes
1 medium sized Vidalia onion
3 Tbs. dill weed

For the dressing: (shown in picture below)
1/4 cup sour cream
1/4 cup Greek yogurt
1/4 cup Mayonnaise
2 Tbs. sushi vinegar (Yes. I know the Pa. Dutch did not have sushi vinegar…but we did.)
1 Tbs. Worcestershire sauce
1/4 tsp. sugar
1/2 tsp. salt

Directions:
Thinly slice the cucumber and onions. For the onion cover with several pinches of salt, knead it, let stand for several minutes to draw out moisture. Squeeze out additional moisture. Rinse under water to wash off the salt and squeeze it again. For the cucumber; cover with several pinches of salt, using less than for the onion. Repeat the steps used for the onion, but because I used less salt I did not need to rinse it. Add all the ingredients together for the dressing. Add the dressing to the onion, cucumber mixture. Add the dill and mix. (See picture below).


This was a very nostalgic taste of summer for my wife. You can't go wrong with a cream based dressing on fresh veggies. The overall taste of this salad is very refreshing and perfect for a hot humid summer day. The day we made this salad my wife had also made a chicken curry. They were both done at about the same time so we decided to taste the products of our (her) labor. We had a small bowl of each and were very surprised to find that the cucumber salad went perfectly with the curry. Then it dawned on us; this was the Pa. Dutch equivalent of Indian cucumber yogurt salad i.e. raita a customary side dish for curry. No wonder they went so well together.

Spare ribs cooked in Instant pot with home-made BBQ sauce バーベキューソース豚スペアリブ

 This was the second version of pork spare ribs we made using Instant Pot. I asked my wife to come up with the BBQ sauce. We looked at a few Instant Pot rib recipes. Most of them start with dry rubs and add apple juice/vinegar in the bottom of the Instant  Pot and place the ribs on the trivet and pressure cook. After that, smear the BBQ sauce and grill it for a few minutes. My wife said, she does not like charred and blackened BBQ sauce on the surface. She remembered a BBQ sauce based on a recipe from Joy of Cooking that she used to make years ago. So we looked up the recipe and made her version based on the notes she wrote many years ago on a post-it note she stuck in the book next to the recipe. This was more traditional flavors but it is also very good. The meat came off the bone very easily.


First my wife made the BBQ sauce:

Ingredients:
One medium onion, coarsely chopped
1 cup ketchup
2 Tbs. Vinegar (we used sushi vinegar)
1 Tbs. Worcestershire sauce
1/4 cup lemon juice
2 Tbs. Brown sugar
1/2 tsp. Salt
1/4 tsp. Paprika
1/4 tsp. Pepper
1 Tbs. Mustard

Directions:
For Sauce:
Sauté and caramelize the onion in olive oil. Add the ketchup and cook until it caramelizes and darkens (Maillard reaction). Add the rest of the ingredients and simmer for about 20 minutes.

For cooking ribs in the Instant Pot.

Ingredients:
4-5 pork spare ribs
onion and garlic powder
Salt and pepper
Olive oil
the BBQ sauce made above
Water

Directions:
Rub the ribs with onion and garlic powders, salt and black pepper
Using the sauté function, heat the Instant Pot and when the oil is simmering, add ribs and brown all four sides, add the BBQ sauce and water so that the ribs are just submerged.
Choose manual, pressure cook to high-pressure and 35 minutes
Let it naturally de-pressurize and remove the lid
Using the sauté function, reduce the sauce for 15-20 minutes or until thick.

This is relatively easy to prepare without additional grilling in the oven. The meat fell off from the bone and the BBQ sauce was sweet, sour, and  tomato-y but not dry or crusty. We are quite satisfied with this.

Spareribs cooked in Instant pot, Chinese style 中華風豚のスペアリブ

 At the beginning of the COVID pandemic, many workers at the major meat packing plants came down sick and some of the plants had to shut down leading to concerns about an impending meat shortage. So, we stocked up on meat, buying and freezing, some cuts we usually don’t get but were available at the time. My wife (a.k.a. Freezer inventory control officer for the household) informed me that we have frozen pork spareribs from that period dated April 2020 which were not getting any younger. With no impending meat shortages in sight, it was with some relief that at least that part of the epidemic was over, we decided it was time to reduce our “Covid stockpile”. The ribs turned out to be quite meaty. Some pieces contained 2 ribs (country style?). In any case, we decided to cook these in the Instant Pot rather than in the oven. The way the ribs were cut, made it possible for me to easily divide the ribs into shorter pieces.  We decided to make two different kinds of spareribs: one with BBQ sauce and the other in Chinese style. This worked well due to the capacity of the Instant Pot. The latter recipe based on what we saw on YouTube, but I had to modify it, as usual, due to the lack of some ingredients. In any case, the picture below shows the final product. It was definitely “off-the-bone” tender and had a sweet and sour taste which was quite good.


Ingredients:
5 3-inch pork spareribs (#1), seasoned with onion powder, garlic powder, salt and black pepper
Vegetable oil for sautéing and searing the meat
(Herbs and aromatics, #2 below)
3 shallots finely minced
4 garlic gloves finely minced
1/2-inch ginger finely minced
one cinnamon stick
2 star anis
1/4 tsp red pepper flakes
(Seasoning liquid #3 below)
4 tbs soy sauce
2tbs brown sugar (I used mixture of dark molasses and sugar)
2tbs oyster sauce
2tbs red miso (instead of hoisin sauce* since I did not have one)
1 cup sake
2 tbs rice vinegar

*I usually have hoisin sauce, but I do not use it often. I must have thrown out the opened one which I kept in the fridge some time ago. Red miso appears to work in the recipe.

Directions:
Using  the “sauté” function of the Instant Pot and a small amount of oil (wait until the oil gets hot), I browned the ribs (#1) in all 4 sides (despite our belief that browning of the meat in a stew is not needed).
Take out the meat and add a bit more vegetable oil and bloom the spices (#2) add the aromatic vegetables (#2) and sauté for several minutes.
Add back the ribs and add the liquid seasonings (#3)
Add 1/2 cup water and pressure cook at high-pressure for 35 minutes with natural de-pressurizing.
Remove the lid after de-pressurized and turn on “sauté” function and let it reduce for 20 minutes or until the sauce thickens.
We tasted a finished rib. (The result after the tasting shown in #4. As you can see it was so good not much was left for the picture after our “tasting”.) The meat easily came off the bone.



This is a good sparerib in oriental/Chinese style. The meat is very tender and falls off the bone easily. With sweet and salty flavor with anis and cinnamon flavors are very nice. I was afraid that the seasoning may become too salty, but it was just fine. Using the Instant Pot made the entire process easy.

Cheesy Lebanon Bologna bites チーズとレバノンボロニャ ミニマッフィン(バイツ)

 Some time ago, my wife made some small muffin/bites with cheese and Lebanon Bologna which is the perfect small appetizer with wine. We kept them frozen and she served the last two. She wanted to make some more and we naturally assumed we could find the recipe in our blog but after some searching, we could not find it. So, we concluded we must not have posted it. We looked for the original recipe and had difficult time but finally my wife found the print-out of the recipe. The original recipe came from King Arthur Flour web site and called “Cheesy Pepperoni bites”. The original recipe calls for “Pizza flavor seasoning ” to make it taste like pepperoni pizza, I suppose. As usual she took the recipe as “advisory” and made some changes mostly based on what ingredients we had available. So she used Lebanon Bologna (she keeps some on hand frozen) instead of pepperoni, added chopped fresh chives and omitted the pizza seasoning (since we didn’t have it).

I ask my wife to take over.

Ingredients
1 1/2 cups (180g) AP flour
1/4 cup (28g) Cheddar Cheese Powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons (57g) butter, cut in pats
1/2 cup (50g) Lebanon Bologna (or pepperoni, diced) (#1)
1 cup (113g) sharp cheddar cheese, shredded
1/4 cup (14g) sliced chives (or scallions) (#1)
3/4 cup (170g) milk



Directions:
Preheat the oven to 425°F. Lightly grease a bite-sized tart pan; a mini muffin pan, or a baking sheet. If using the pop-up tart pan, have an ungreased baking sheet available to use as a base.
In a medium-sized mixing bowl, combine the flour, cheese powder, baking powder, salt.
Add the butter, working it in until the mixture is crumbly.
Add the Lebanon bologna, shredded cheese, and scallions, mixing to distribute (#2 above).
Add the milk, mixing just until everything is evenly moistened.
Scoop the dough by the level tablespoonful (second smallest ice cream scoop we have)  into the mini-muffin pan. 
Place the mini muffin pan onto a baking sheet to catch any drips.
Bake the biscuits till they're a medium to deep golden brown, 10 to 14 minutes.
Remove the biscuits from the oven, and cool briefly on a rack. Use a table knife to pop the bottom of the pan off the biscuits

I am sure pepperoni works well in this but Lebanon Bologna’s smoky and sweet flavors also work well. It is very cheesy with cheddar flavor which may be due to the addition of  “Better cheddar cheese powder” from King Athur.

Basil cake bread バジルブレッド

My wife came up this as a variation on Mint cake. We have a forest of basil on the kitchen window sill and we are hard pressed to keep up with its production. After making a batch of mint cake my wife looked at the basil forest and thought, ‘if we can make a cake using mint how ‘bout a cake made with basil?’ This is how Basil cake came to be. 

The basil cake as shown below (sans icing) tastes very good and we were quite satisfied to eat most if it this way. 




Then my wife came up with the idea of making an icing of goat and cream cheese. This is very good too. (The icing is optional). 



Ingredients:
one 5.5 oz package of baby spinach cooked (about 1 cup when cooked and moisture drained off)
1 1/2 to 2 cups raw basil (packed)
3 eggs
1 tsp. vanilla
3/4 cup olive oil
2 cups flour
1 1/2 cups sugar
3 tsp. baking powder
1/2 tsp. salt


Icing (Optional)
4 oz of cream cheese
4 oz of goat cheese

Directions:
Sift together the flour, sugar, baking powder and salt in a bowl and then set aside. Put the spinach, basil, eggs, and vanilla, in a blender and puree. Then with the blender on a slow speed add the olive oil to make an emulsion. Add the vanilla and mix in. Add the spinach/mint mixture to the flour. Put into a greased 6" x 10" inch baking pan that has been lined with parchment paper (to made it easier to get the cake out of the pan when it is done.) Bake at 350 degrees for 25 to 30 minutes or until a tooth pick comes out clean.

For the icing. Put the two cheeses in a stand mixer bowel. Using a paddle, cream the two cheeses together. Split a piece of the basil cake in half and spread on the cheese blend

This was a very good innovative cake/bread. It has a nice moist texture. The main thing, however, is the rich robust flavor the basil brings to the show. It “sings” a note of almost meat-like umami savoriness which contrasts well with the overall slight sweetness of the cake. (I wondered if this is because when I taste basil it is generally in association with a meat rather than a sweet dish?) 

The cake tastes very good just “as-is” and after contentedly eating half of it that way my wife came up with the idea of making an icing out of cream cheese and goat cheese whipped together. A sweet icing such as the one used for mint cake would not have gone well with the robust flavor of the basil but this alternative really works because it is some what savory. Whatever, this is a great and surprising way to gain some constructive control over the basil forest.

Apple tassie (mini pie) ミニアップルパイ

This is another version of the mini pie called “tassie”. This time my wife made it with apples so it is a mini apple pie. As with the “buttermilk mini pie”, this is a small dessert which is perfect for us. It is traditional apple and cinnamon flavors.



As usual, I will ask my wife to take over.


Ingredients: (makes 24)
For the crust
8 tablespoons (4 ounces/120 grams) unsalted butter, softened, but still cool to the touch
3 ounces (80 grams) cream cheese, softened, but still cool to the touch
1 cup plus 2 tablespoon (140 grams) all-purpose flour

For the topping:
1/2 cup (62.g) AP flour
6 Tbs. brown sugar (1/4 cup + 2 Tbs.)
1/4 tsp. salt
4 Tbs. (60 g) butter

For the filling:
12 oz. (300 g) apple grated
1/2 cup (110 g) brown sugar
2 Tbs. (30 g) melted butter
2 Tbs. cornstarch
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. salt

Directions:To make the crust: In the bowl of a stand mixer fitted with the paddle attachment beat together the butter and cream cheese until smooth, about 2 minutes. Stop the mixer and add the flour. On low speed, mix until no streaks remain and the dough starts to come together, about 1 minute. Scrape any stray dough from the sides of the bowl, gather into a ball and flatten into a smooth rectangle or disc. Cover tightly and refrigerate for 1 hour.

Cut the cold dough into 24 equal pieces, (I did this by dividing the total weight of the dough by 24 to get the gram weight of each piece. That way they would at least be somewhat equal). Using your fingers, evenly press each piece into the bottom and up the sides of the 24 mini muffin cups, making sure there are no holes. (This part was a bit tricky I found the best way was to make a small ball out of the dough, put it in the cup then using my thumb push down on the center of the ball forcing a depression in the center and the displaced dough up the sides of the cup.) There is enough butter in the recipe that the papers were not necessary. Refrigerate uncovered, while making the filling.

To make the topping:
Mix all the ingredients together using your fingers until they form small pea sized clumps. Set aside

To make the filling:
Grate the apple using the large holes of a grater. Add all the other ingredients mixing to distribute them evenly. Add about a tablespoon of the filling to each dough cup filling them about 3/4 full. (I used the smallest ice cream scoop to fill the cups about 3/4 full.) Top each cup with the topping.

Bake in a 350 degree oven for about 15 to 20 minutes until the crumble and crust are golden brown. Cool completely before removing from the pan.

These are wonderful little pies. Just the right amount for a sweet mouthful after a meal. Just perfect for us. The filling became almost like a thick jam which went very nicely with the crunch of the topping.

Cheese curd with Indian spices and yogurt

 This is from my wife’s new Indian cookbook called “Thali” by Maunika Gowardhan. Since my wife made cheese curd (paneer) to use up milk approaching its expiration date, she decide to try this recipe. It is called “Achari Paneer Tikka” but as usual, some of the ingredients were not available such as nigella seeds and particularly “gravy and oil” from “store-bought Indian green chili pickles”. We couldn’t even imagine how this should taste so we improvised using the pickling liquid from a jar of capers. We have no idea how this may have changed the end product but it clearly didn’t “hurt” it. Also we pan fried the paneer rather than grilling it. It came out rather nicely (below) with a brown crust.


Ingredients: (#1 below)
Paneer cut into inch size pieces (#2) below
2 garlic cloves roughly chopped
1 inch ginger root  roughly chopped
1 Tbs. coriander seeds
5 Tbs. greek yogurt
1 tsp. ground turmeric
1/2 tsp. garam masala
2 tsp. of pickling liquid from a jar of capers
salt to taste

Directions:
Blend the garlic and ginger in a small blender to make a smooth paste. (We used garlic and ginger paste from a tube.) Mix the garlic ginger and other spices into the greek yogurt (#3). Add the paneer cubes and coat them in the marinade (#4). Let them marinate for a least an hour. 

To cook: put a little oil in a frying pan. Add the paneer and marinade. Cook the pieces, turning them occasionally until the pieces get browned on the surface. 



This was a good variation on just plain paneer. The pieces had a nice crunchy, spicy crust and were soft inside. The flavor got even better over time with the pieces stored in the refridgerator. They toasted up well in the toaster oven and the crust got crispy again.

Duck-fat potato Focaccia bread アヒルの脂肪入りジャガイモフォカッチャ

This focaccia bread is based on a recipe from a new cookbook called "A good day to bake".  We got the cookbook at the recommendation for my wife's sister. She read a good review of it in the New York Times The original recipe calls for goose fat. But we did not have goose fat. We did, however, have frozen duck fat (leftover from making duck confit). This is essentially a recipe for the standard focaccia bread but instead of olive oil, it uses duck (or goose) fat plus thinly sliced potatoes and rosemary as toppings. It came out nicely with the potato almost like potato chips (see picture below).


Ingredients:
450 g (3 and 1/4 cups) bread flour
7gram instant yeast
300 ml (1 1/4 cup of water )(or a bit more or less depending on the dough consistency)
1 tsp Kosher salt
80g duck fat or goose fat
1tsp sugar

Topping
3-4 baby red potato, eyes and skin removed and sliced thinly (I used a Japanese mandoline "Benriner")
A few sprigs of fresh rosemary, leaves removed and roughly chopped.
More duck fat to coat the potato slices.

Directions: (Since the amount of flour and water is the same as my focaccia bread, I used my usual procedure of the food processor fitted with a kneading blade instead of a stand mixer or by hand).

Add the flour, salt, sugar, yeast and duck fat in the food processor. Pulse it to roughly mix. Turn on at low speed and drizzle in the water until a dough ball forms above the kneading blade (the amount of the water may need to be adjusted). Let it stand for 5 minutes so that the moisture distributes evenly. Turn on the food processor to low speed and knead the dough for 1 minute. Take the dough out onto a floured board, and knead 5-7 minutes and make a tight ball. Put a small amount of olive oil (or duck fat) in a bowl, place the dough ball turning a few times to coat in the oil/fat. Cover the bowl with plastic wrap and let in rise until the volume doubles (1-2 hours) (I used a bread proofing box at 80 F). Place the dough on a 38x26cm(15x10 1/2 in) lightly oiled (I used olive oil but duck and goose fat can be used) baking pan, spread to fill the pan (may need 5-10 minutes rest to relax the dough). Cover it with a plastic wrap and let it rise for 45-60minutes (the baking pan did not fit into my proofing box, so I just put it on the top of the box without the lid. Preheat the oven to 375F (the original recipe calls for 435F but to me that is too hot since we do not like a hard crust).

Coat the dough surface with oil (I used olive oil) and make deep dimples using your fingers. Spread the duck fat coated potato slices and roughly chopped fresh rosemary leaves (see below).


Bake it 25-30 minutes or until the surface is brown/golden (see below picture). Take it out on the wire rack and let it cool.


Thinly sliced potato adds an interesting crunch texture almost like potato chips (but not quite that crispy). We could taste the rosemary but not the duck fat.



We had similar experience with the pan baked potato with duck fat. Somehow the duck fat does not add much of the flavor. I would rather use olive oil to reduce the amount of saturated fat. In any case, this is a good focaccia but I will make it without duck or goose fat next time.

Quail braised in Greek style ギリシャ風ウズラ

My wife pointed out to me that we have some frozen quail. The last time we cooked quail, we baked them but we apparently did not blog the recipe. Our memory is that it was not bad but there were lots of small bones. This time we looked for other recipes and decide go with this “Greek style” recipe. The original recipe calls for braising the quail in wine, with aromatic vegetables then placing them in a Dutch oven and cooking them in an oven for 1 hour. Once they were cooked the recipe called for adding olives, artichoke hearts and capers once more warming it up again on the stove top. We did not see the point in using the oven and, instead, used our Instant pot (more about this later). The picture below shows the finished dish. The only way to eat this is using your fingers. (Necessary to separate the meat from all the minuscule bones).  It had lots of flavor ingredients (lemon, oregano, artichoke herts, black olive, caper and garlic) but the flavor was not as intense as we would have expected.



Ingredients
1/4 cup olive oil
4 to 8 quail
Salt
3 stalks celery, chopped
1 large yellow onion, sliced thin
1 head garlic, cloves peeled but whole
2 teaspoons dried oregano
1 cup white wine
3 Lemons, zest and juice
12 ounces marinated artichoke hearts
12 ounces pitted black olives
1 tablespoon capers (optional)
3 tablespoons chopped fresh parsley (we skipped this since we id not have it)
Black pepper to taste

Directions:
Using kitchen shears or a knife, cut out the backbones and ribs of the quail. The picure below is before I took of the ribs.


Salt the quail well and brown them in the oil in a frying pan, removing them to a bowl as they brown (I did brown the skin as indicated but I am not sure this is necessary).
Add the onion and celery and sauté until translucent, but not browned. 
Add the garlic cloves, the quail back into the pot along with any juices that have accumulated in the bowl.

Add the oregano and the wine. Mix well and let the wine boil for a minute.
Just barely cover the quails with water*, bring it to a simmer and add salt to taste. Add the lemon zest. 
Place the quail and vegetables in the instant pot, cut the parchment paper to fit the Instant Pot and place it as a paper lid. Pressure cook for 30 minutes with natural depressurizing. See below.


I could have continued with the instant pot but I placed the contents in a frying pan on a medium flame and added the artichoke hearts, black olives and capers and cooked for 5 minutes.
Add lemon juice and black pepper.

* This step of adding water probably works if the quail is cooked in the oven. But it does not work when cooking in the Instantpot. This is because it seems the liquid does not evaporate with pressure cooking the same as it would with oven cooking. After the quail was cooked the sauce was a bit watery. I removed the quail and put the sauce in a pan and reduced it to a gravy consistency. Next time I won’t add any water.

Later, my wife took the meat off the bone and simmered the leftovers for 30 minutes which reduced the sauce even more and further intensified the flavors. I added fresh artichoke hearts, olive and caper. This one tasted much better. Be careful of small bones, however.

Home-made English Muffin 自家製イングリッシュマフィン

We posted English muffin previously but have not made them for some time especially since my wife started making English muffin bread. But for some reason, my wife started making English muffins again. One of the problems in making English muffins is that the dough is very sticky and it is very difficult to handle especially if you use English muffin rings. My wife used to cut the dough using a kitchen scissors to place it in the ring. My version of "no-knead English muffin" was a bit easier. This version my wife used came from YouTube and used a lot of cornmeal as a way to handle the sticky dough. (Although this was the amount of cornmeal shown in the video, a lot less probably would have worked just fine.) The result was rather rewarding. It is definitely an authentic English muffin.


I ask my wife to continue. This recipe came of aYouTube video called "Sheldo’s kitchen". My wife painstakingly wrote down the recipe, frequently stopping the video.

Ingredients:  (12 muffins)
4 cups (560 g) AP flour
1 1/2 tsp (10 g) salt
2 Tbs. (28 g) sugar
1 tsp yeast
3/4 cup (167g) greek yogurt
325 Ml water
oil 3 Tbs. (40 g) vegetable oil.

Double recipe:
8 cups (1,120 g) AP flour
3 tsp (20 g) salt
1/4 cup (56 g) sugar
2 tsp yeast
1 1/2 cup (334g) greek yogurt
650 Ml water (milk?)
oil 6 Tbs. (80 g) vegetable oil.



Directions:
Stir to wet all the flour. Stir to further combine and knead slightly.  In the first  90 minutes, 3 sets of stretches each 30 minutes apart. Take dough and pull out one side and fold it to the middle. Do that with each of the remaining 3 sides. Let the dough rest 30 minutes and repeat stretch 2 more times for a total of 3 stretches. Leave undisturbed for 1 hour. Put covered in fridge for 10 to 48 hours. The longer it is in the fridge the better the taste. 

Cover cookie sheet with corn meal. (A little less cornmeal than what I used here would probably work just fine). While the dough is still cold make it into a round. Put a large hole in the middle and pull the edges out straight and stretch into a log. Divide the log into 12 portions (24 if using double recipe). Make each portion into a flat round and move the edges to the middle then roll into a ball. Put on corn meal covered tray about 2 inches apart. Dust the top with corn meal. Cover and let rise until doubled.


Using 2 spatulas lift the dough into a skillet (no butter). Flatten the top. Cover with a lid and cook 6 minutes. (After 2-3 minutes rotate so it browns evenly.) Turn over and tap the top with a spatula to flatten. Cook another 6 minutes with lid off. After they have cooked 12 minutes check temperature. It should be 200 F to be done.  


Let it cool off a bit before separating the muffin using the "fork method".


These were our idea of genuine English muffins. They toasted up nicely with lots of “little nooks and crannies” to catch the melted butter. The crusts were crunchy and had a mild taste of cornmeal which was very nice. (One of the problems was during cooking the excess cornmeal tended to burn). While very good they were a bit of work to make. Making English muffin bread is much easier.

Kerala-style chicken curry using drumsticks ケララ風のチキンカレー

At the start of COVID, certain grocery items became scarce. Indeed, we had a time when we could not always get chicken or pork. We turned to Instacart and got groceries from the Korean market "HMart". They appeared to have sources different from the ones used by the regular grocery stores. They were able to obtain these meats when the other grocery stores couldn’t.   So one time we got a large package of chicken "drumsticks" which is a part of the chicken we usually don’t get. But at the time we were grateful to get any part of the chicken. In any case, my wife recently found the package in our freezer and we decide the time had come to use it. We made two different dishes; I made a Japanese style simmered dish in black vinegar and soy sauce or "Kurosu-ni" 黒酢煮 in the Instant pot, and I asked my wife to make the remainder into curry. After consulting her Indian cookbooks, she decide to make Kerala-style chicken curry based on a recipe in Madhur Jaffrey’s “Curry Easy” cookbook.


As always, this was a very flavorful and satisfying dish. The recipe called for basil which we had in large supply from our window sill basil forest.* It is shown here with basil, tomatoes and a dab of greek yogurt as a topping. 

*Digression alert: This basil forest was another legacy of the covid time period. We were having trouble getting fresh herbs since we were relying on grocery deliveries. Several times the basil arrived completely rotten and we had to throw it away. Other times it was not available at all. So when a decent package of basil finally arrived from the grocery store my wife decided to root it, plant it and raise our own crop. She took some cuttings that included long stems and put them in a glass of water. About a week later the basil formed roots so she planted it in small pots of soil. As long as the basil isn’t allowed to flower it will continue producing. So over time my wife took cutting after cutting planting them is small pots and putting them in the sun on the window sill in the kitchen. The basil is quite happy there and we now have a basil forest growing. We had so much basil my wife gave away several pots as gifts. It is amazing that all of this derived from just one small plant from the grocery store. 

The picture below shows part of the basil forest.


The next picture shows a basil stem that has sprouted roots. This developed after it had been in the water for about a week. It is now ready to be planted in soil.


For the Kerala-style curry

Ingredients:
1/2 tsp whole cumin seeds
1/2 tsp. Whole brown mustard seeds
2-3 onions roughly chopped
2 Tbs. Peeled and finely chopped ginger
4 garlic cloves peeled and chopped
1/2 tsp cayenne pepper
1 Tbs. Red paprika
1 tsp. Salt
15 to 20 curry leaves (or basil leaves as a substitute.)
Several small red potatoes skinned and chopped into small similar sized pieces.

Directions:
Add some peanut oil to a frying pan and add the cumin and mustard seeds. As soon as the mustard seeds start to pop add the onions and stir until the onion is lightly browned. Add the rest of the spices stirring until they bloom i.e. become fragrant. Add the potatoes and stir them into the sauce. Then add the chicken pieces. Spoon the sauce over the chicken. Turn the heat to simmer, cover and cook until the potatoes and chicken are soft. If the sauce gets too thick and starts to scorch add some chicken broth. See the next picture below. The bright red color comes from the paprika. Just before serving add the basil leaves (shown in the last picture).

 


This was another good curry. It was a perfect way to use the chicken drumsticks. The potatoes again absorbed the flavors of the spices and added to creaminess of the sauce. The taste of the paprika and the basil was a nice addition.

Blueberry cake with miso crumbles ブルーベリーケーキとブルーベリー味噌クランブル

 We, especially my wife, have been exploring Western-style dishes using miso such as miso-peanuts butter cookie, miso maple syrup loaf, smothered chicken with miso and bourbon, carrot cashew spread with miso and avocado miso dressing. This is another one of these dishes made by my wife. The miso is in the crumbles.


This is a very moist and delicate cake/muffin with a nice crusty top. I can definitely taste miso.



I will ask my wife to fill in the ingredients and directions.


Ingredients:
For the crumble:
2 1/2 cups whole wheat flour (3/4 cup for the crumble, 1 3/4 cups for the cake)
1/2 cup brown sugar
4 Tbs. Butter melted
3 Tbs. White miso

For the cake:
1 3/4 cups whole wheat flour (mentioned as part of the 2 1/2 cups above)
1 1/2 tsp. Baking powder
1 tsp. Salt
1/4 tsp. Baking soda
1 cup (2 sticks) butter melted and cooled slightly
2 large eggs
1 cup brown sugar
1 cup whole milk greek yogurt
1 tsp. Vanilla
1 pint blueberries


Directions:
Mix the ingredients for the crumble until combined and set aside. In another bowl mix together the dry ingredients (flour through baking soda) and set aside. In another bowl mix together the wet ingredients (melted butter through vanilla). Mix the wet ingredients into the dry ingredients. Fold in the blueberries. Spread in a 9X13 pyrex baking dish that has been light greased with a greased parchment paper on the bottom. Spread the crumble over the top. Cook in a 350 degree oven for a total of 60 to 70 minutes. Start checking every 30 minutes and tent the top with aluminum foil if the crumble starts to get too dark. Cook until the top is firm and a tester inserted in the center comes out clean. Let the cake cool in the pan for a least 2 hours. 


This is a very unusual cake (in a good way). The combination of the whole wheat flour, miso and brown sugar makes a sweet/salty/robust flavor we have never tasted anywhere else. The miso is very pronounced. The blueberries add a burst of fresh sweetness which helps bring the other flavors back into balance. The crumble is nice and crunchy. It complements the tender texture of the cake. And the cake is extremely tender. I had trouble getting it into a storage bag in one piece even after cooling several hours. I couldn’t slice or serve it until it had been in the fridge overnight. Even then we had to eat the slices with a fork or spoon. Nonetheless it is a nice bread with coffee in the morning.

Puff pastry cheese swirls

My wife decided she had to use up some old frozen puff pastry which passed “best-by date” by a year. She found a recipe for broccoli based cheese swirls on the back of the puff pastry box and decided to make them. In addition, she found some pesto we had made and frozen sometime ago and decided to use the pesto to make a pesto based cheese swirl. Sort of killing two birds with one stone approach. 

As usual, I ask my wife to provide how-to.

Ingredients:
two sheets of frozen puff pastry

For the Broccoli based cheese swirl
The amounts of all the ingredients are arbitrary and are generally enough to cover the sheets.
Cooked broccoli finely chopped (spinach could also be used)
Scallion finely chopped
Various cheeses grated your choice (I used smoked gouda, mozzarella, and Parmesan.)

For the pesto based cheese swirl
Pesto to cover the sheet of puff pastry
Various cheeses grated. (I used Monterey Jack, Cheddar and Parmesan

Directions:
Thaw the sheets of puff pastry. Spread the ingredients to cover the sheets (#1 & 2 for the pesto) and (#3 for the broccoli) based. Roll up the sheets and slice into 1 inch thick pieces. Cook in a 400 F degree oven for 15 to 20 minutes until the swirls are golden brown.


These make a wonderful alternative to the traditional cheese tray. The pastry was light and crunchy. The cheese was nicely melted and toasted. The scallion flavor came through and really made the broccoli based rounds. While both cheese swirls were very good, in a contest of pesto versus broccoli I am completely biased in favor of pesto. (Actually it may not even be a contest).

Hamburger with home-made buns 自家製バンのハンバーガー

We cannot remember when was the last time we ate a hamburger; probably sometime when we lived in California i.e. many years ago. Since the package we got recently from Omaha steaks included hamburger patties (total of 8), we decided to make hamburgers. Also as we were “taste testing” the burgers, my wife declared there would be no pickles, catchup, mustard or onions (or “special sauce”; this was not Burger King/McDonalds after all) to obscure the taste. But cheese was OK. (Truth-be-told she is a hamburger purist.) So as shown below we had a cheese burger on a homemade hamburger bun (made by my wife just for the occasion, see below) with a side of scalloped potatoes (also from Omaha steak) and caprese salad.


We thought about grilling the burgers on a charcoal fire but decided to cook them in a frying pan with olive oil since it was the easiest. Initially we thought the hamburger patties looked thin but once they were out of the package and cooked they were nicely thick enough. My wife decided to use two cheeses; cheddar and Monterey Jack. After the meat was cooked, we toasted/fried the hamburger buns using the remaining oil and meat juices in the pan which came out rather nicely. As my wife wished, no ketchup, mustard, onion, lettuce, or pickles.  The meat was just cooked right and very juicy and had a nice beefy taste. This is a good way to just taste the meat and of course, the cheeses enhanced the flavors. 


Since we have a basil forest growing in numerous pots on the kitchen window sill, I made caprase salad with skinned Campari tomato, fresh mozzarella cheese and basil. Salt, black pepper, our favorite Spanish olive oil and balsamic vinegar dressed the salad.


My wife made hamburger buns for this occasion. She used a rather basic recipe from King Arthur.  I will ask her to continue.


Ingredients: for the dough
3 1/2 cups (420g) Ap flour
3/4 to 1 cup (170g to 227g) water, lukewarm (she used milk)
2 tablespoons (28g) butter, at room temperature
1 large egg
1/4 cup (50g) granulated sugar
1 1/4 teaspoons salt
1 tablespoon (9g) instant yeast

For topping the buns.
1-2 Tbs. Butter melted to brush on top of the muffins before baking them.

Directions:
Mix and knead all of the dough ingredients in a stand-up mixer with a dough hook to make a soft, smooth dough. Cover the dough and let it rise until it's nearly doubled in bulk, about 1 to 2 hours. Gently deflate the dough and divide it into eight pieces (about 100g each). Flatten each dough ball with the palm of your hand until it's about 3" across.

Place the buns on a parchment-lined baking sheet. Cover and let rise until noticeably puffy, about an hour. Toward the end of the rising time, preheat the oven to 375°F. Brush the buns with about half of the melted butter. Bake the buns for 15 to 18 minutes, until golden (see below).
Remove them from the oven and brush with the remaining melted butter; this will give the buns a satiny, buttery crust (which she did not do). Cool the buns on a rack before slicing in half, horizontally.


These hamburger buns really added to the overall hamburger experience. The buns in-and-of themselves had a very nice flavor and a soft texture. (We had some later just lightly toasted and buttered and they were quite good served that way.) The hamburger itself was nicely seasoned with a very distinctive beefy taste. Even without all the condiments, the burger and bun were every thing you could possibly want in a hamburger.

Scattered sushi ちらし寿司

When we have salmon, I make salmon salad from the leftover cooked salmon. My wife thinks the combination of sushi rice and mayo-based items go well together (which I totally agree). We have made a roll sushi and “Gunkan” sushi from the salmon salad. One weekend, we realized our store of frozen cooked rice was getting low (it is always so convenient to have frozen rice), so we decided to make fresh rice for lunch to increase the frozen rice reserve*. Then my wife asked, “How ‘bout using the fresh rice to make scattered sushi or “chirashi-zushi” ちらし寿司 using the salmon salad (which I had just made in the morning) ?” As I posted before, scattered sushi is just a bed of sushi rice and the topping can be almost anything from totally vegan to all kind of sashimi fish. So, this is what I came up with which does not involve any raw or sashimi fish but, in addition to the salmon salad,  I added cooked shrimp and scallops.

* Frozen rice reserve: Making fresh rice this time did not help increase our frozen rice reserve. In addition to eating several portions as sushi for lunch, we then decided to have Yakitori 焼き鳥 in the evening since the weather was so nice and we had 4 chicken thighs we needed to cook. My wife greatly appreciates having grilled rice balls or “Yaki onigiri” 焼きおにぎりwhen we do Yakitori.  So, I also made four small rice balls in preparation. As a result there was not much of the freshly made rice to freeze as a reserve.


I may have gone slightly overboard especially since this was a  lunch.  The garnish included golden thread eggs or “Kinshi-ran” 金糸卵, pickled ginger or”gari” 生姜の甘酢漬け or ガリ, cucumber seasoned with sweet vinegar きゅうりの酢の物 and nori threads or “Kizami-nori” 刻みのり.


We made fresh rice, using rice we got from the New York Rice factory and is grown in Hokkaido “Yumepirika” 夢ぴりか. I used sushi vinegar from the bottle (Mizkan brand). I used as much sushi vinegar as the rice could absorb (about 10% of the weight of rice). I made the sushi rice in a Japanese “hinoki” cedar  tub or “han-giri” 半切 that we bought in Japan many years ago and amazingly still has a beautiful hinoki smell. I covered the seasoned rice with a wet dish towel and let it sit for 5-10 minutes so the rice could absorb the seasoned vinegar.

I added the sushi rice to the bottom of the bowl (square bowl we got in Sapporo just after we got married so many years ago).


For the scallops and shrimp (both were frozen and came from Great Alaska Seafood),  I thawed and gently poached them in salted water with a dash of sake. I made the scallops into several thin slices. After removing the shells, I halved the shrimp length wise.

I placed the salmon salad on the center of the rice and spread seasoned sliced shiitake mushroom (brown circle around the salmon salad). Then I distributed the scallops and shrimp around the shrimp salad and mushrooms. 


Then, I added the garnish as seen in the previous pictures.

This was a really luxurious lunch. This dish once again confirmed my wife’s notion that sushi rice and mayo-based toppings go well together.

Crispy Cheese round カリカリチーズ

 One evening, my wife served this as a surprise. According to her, she saw a similar dish on YouTube WebSpoon. The original used slices of pepperoni. Since she did not have pepperoni, she used black olives. It was crispy and cheesy with parmesan flavor coming through. Good appetizer with wine. 


I will ask how she made it.

Ingredients:
Grated cheese of your choice and taste. The amounts are arbitrary. I used:
Smoked gouda
Cheddar
Monterey Jack
Mozzarella
Parmesan

Tomato sauce
Black olives (or pepperoni)

Directions:
Grate the cheeses and mix together. Make little mounds of the cheese mixture on a cookie sheet lined with parchment paper. (The parchment paper is important because it makes it possible to remove the cheese once its melted). Spoon the tomato sauce on the mounds and top with whatever you are using as the topping; olives or pepperoni. Heat in the oven at 390 degrees for 10 minutes. The cheese will melt and brown.

These are a quick flavorful cheese snack for appetizer.  They make a nice alternative to the traditional cheese plate. They are chewy, salty and go perfectly with red wine.

Shrimp in spicy mayo sauce エビマヨ

 My wife found 4 frozen good-sized shell-on shrimp from Great Alaska Seafood, lonely and tucked hidden under a number of other items in the freezer door shelf. She asked me if I could make something with them. I am familiar with popular Japanese shrimp dishes called “Ebi-chiri*” エビチリ and  “Ebi-mayo*” エビマヨ. (Japanese are very fond of two condiments; ketchup and mayonnaise).  I got an inspiration from these dishes and made this (slightly) spicy mayo sauce for the shrimp. I also added blanched sugar snaps since I had them.

*Digression Alert:  Ebi-chiri was supposedly invented by Chin Kenmin 陳建民 (the father of Iron Chinese Chef Chin Ken-ichi 陳健一) based on a Sichuan dish called 乾焼蝦仁 modified to suit Japanese taste. The origin of “Ebi-mayo” appears less certain but it was based on an American Chinese dish of shrimp with Aurora sauce (mixture of ketchup and mayo) which was improved upon by a Chinese Chef in Yokohama. There are many variations of these two recipes.

This dish was impromptu but it came out rather well for a small appetizer. Despite the fact the frozen shrimp had been abandoned for some time in the freezer door shelf they tasted very nice; no iodine flavor and good firm texture.

Ingredients: (two small servings)
4 shrimp (I used 4 shell-on frozen shrimp), thawed under running water, shell removed, brined in cold salted water for 5 minutes, washed in cold running water and patted dry
Olive oil for frying

Sauce (mix the ingredients in a small bowl)
2 tsp mayonnaise
2 tsp Greek (strained) yogurt
1/2 tsp Sriracha or any other hot sauce such as gochujang

Directions:
Lightly salt the shrimp and cook in a pan with olive oil, turning few time for total of 1 minute.
Set aside the shrimp
Add the sauce warm it up and then put back the shrimp, add the sugar snaps
Serve immediately.

Brining in salt water brought back the shrimp's briny taste and texture (“puri-puri” プリプリ in Japanese). This is perfect with either wine or sake. I should make this dish more often.
