This is another edition of my wife’s “small bites” series. This time it is a variation on “Pork, Potato, Goat Cheese Bites”. For this version she did not have mashed potato and parsnip cooked in the Weber. So she made mashed potatoes by cooking a Russet potato in the microwave. This is quite good but the original had a bit more flavors due to inclusion of parsnip and juice from the roasted pork.
Ingredients:
1 1/2 cup mashed potato (from potatoes cooked in pork barbeque)
6 eggs
8 oz sour creme
2 diced onion
8 oz roasted pork, diced.
Cheeses (I used smoked gouda and cheddar cheese
Directions:
Microwave a russet potato for 5 minutes or until done. Peel and mash the potato. Saute the onion. Add the onions to the potatoes. When the potato and onion have cooled to room temperature add the eggs sour cream, and roasted pork. Scoop the potato mixture into mini muffin tins lined with paper cups. Top with a layer of cheese. (I topped it with a layer or smoked gouda and another layer of cheddar.) Cook in a 350 degree oven for 15 to 20 minutes.
These were also very good cheese bites. They didn’t have quite the complexity in flavor that the previous batch had because they did not include mashed parsnips and were not cooked in the Weber. Again the diced pork was crucial. The cheeses were fairly strong tasting and really added to the dish.
